Mexican chicken, beef and pork casserole recipe? I normally have this dish from the local Mexican restaurant. It's a mix of chicken, beef and pork strips with onions, mushrooms and pepper in a creamy sauce and it's lovely. It's called Tex Mex special. The sauce is red-ish. Does anyone know a recipe for anything like that?
Can you make a Casserole Dish in a Pot on the stove top? Okay, my grandma made this "Mexican Chicken Casserole". My stove isn't working but my stove top is. The recipe includes: Chicken breasts (cooked beforehand and cut up) 1 can Milk 1 can Cream of Chicken Soup 1 can Rotel Tomatoes Cheese And crumbled Doritos Chips I am most worried about the Doritos. Wil they still soak up the liquid? Will the dish still taste good?
Any suggestions on a good Mexican inspired casserole? I'd like for it to contain brown rice, diced tomatoes, green chili's, any variety of cheese, black beans, corn, etc. and maybe some tortilla strips for crunch. I don't eat meat but wouldn't mind throwing in ground beef or chicken substitutes.

How about a Chicken Taco Casserole tonight? Ingredients: 1 12 ounce can of chunk white chicken breast 1 10 ounce can of Campbell's Fiesta Nacho Cheese soup 1 10 ounce can of Campbell's Cream of Onion soup 1 8 ounce can of Mexi-Corn vegetable mix 1 cup of milk 1 half cup of butter or margarine 2 eggs Corn chips 1 bag or box of your favorite pasta (I like Barilla's medium shells) 1 bag Kraft Mexican blend grated cheese Break the eggs in a large casserole bowl and beat them till well blended. Add the chicken, including the water in the can (I never drain any canned ingredient.) Add the soup--Nacho Fiesta Cheese first, followed by Cream of Onion. (Savor the smell of the Cream of Onion soup. Yummm.) Add the MexiCorn mix and the milk and stir until well blended. Add the butter and let it sit. Cook the pasta and drain. Add to the casserole and mix well. Slip in the corn chips, all around, through and atop the casserole. Moisten them with the casserole mix. Top with cheese. Bake at 365 degrees F for 40 minutes and serve hot. Enjoy! I have been working on this chicken casserole for over a year. I think I finally got it right. Harley, if you can get Campbell's soups, look for any cheese soup if Fiesta Nacho Cheese isn't available. You can improvise the MexiCorn by taking canned corn niblets and putting in finely chopped peppers, preferably red bell peppers. Any good pasta will do. I assume you can get most of the other ingredients, and don't worry too much about proportions if you can only get metric. This recipe is fairly forgiving. The calorie count can be reduced several ways. Drain the canned chicken, or even substitute fresh chicken breast, boned and skinned and separately baked or broiled. You can use one egg instead of two and substitute low-fat cheese and milk. You might even be able to find the soups in low cal forms. Even so, this is a pretty rich meal. However it is a complete meal, short of salad. Small portions balanced with a good fresh salad will help the calorie count.
What do you do with left over rotisserie chicken? I like to buy rotisserie chicken from my grocery store and use it in casseroles, mexican, etc as a short cut. Takes less time than making chicken from scratch. Does any one else do that and if so, do you have any good recipes that you use the rotisserie chicken.
Mexican Meal with Chicken? hi! I probably won't be much help, but i'll try. So one time i ate this mexican meal and it was delicious! I can't recall what it was, but i remember a little bit about it. It consisted on a casserole dish with a tortilla base and chicken breast. On top was a cheesy topping. Then there were little jalepeno peppers on top. It was so good! Any suggestions appreciated. i know i'm not very helpful, but thanks anyway.

I am a 16 year old girl, 5'2, 91 pounds right now, recovering from anorexia My lunch today will be: 2 slices roasted turkey lunch meat (about 20 cals) 1 tablespoon fat free thousand island dressing (about 25 cals) 3? tablespoons bavarian sauerkraut (about 50 cals?) 1 slice reduced fat swiss cheese (60 cals) 2 slices rye bread (140 cals) then the spray to grill it in the pan or whatever (about 20 cals?) its a reuben basically. i think it would be around 320ish calories? for breakfast I had quaker reduced sugar oatmeal and 1/2 cup skim milk, so my total would be like 500 before dinner, which seems really high to me. :/ we"re having mexican chicken casserole. Any opinions? Also...I am trying to gain a few pounds. :/

One of mine is: Mexican Chicken Line a greased 13 X 9 casserole dish with crushed doritos (1-2 Cups) In a bowl mix 2 boneless chopped chicken breasts, 2 cans cream of chicken soup, 1 can rotel tomatoes and green chiles, and 1/2 of a bag of mexican blend shredded cheese Pour on top of crushed doritos and bake at 350 for 30 minutes Take out of oven, top with remaining shredded cheese and more crushed doritos (1-2 Cups) Bake for about 5 more minutes, just to melt the cheese. Which for tonight....mexican or italian? I am doing a chicken casserole tonight (very cold where I am, perfect casserole weather) And with the ingrediants I have I can either give it a mexican or italian flavor, which should I go? For the mexican I use mild salsa, chilli bean, corn and sprinkled with toasted tortilla chips. For the italian I use a tomato sauce base, italian herbs, mushrooms and black olives. which sounds nicer?

Do you know any good chicken breast recipies (I have a good Munchies macaroni casserole recipie)? I need a good recipe for boneless skinless chicken breasts (2). I have asparagus, onion, spices, red bell pepper, canned dices tomato, canned corn, celery, beer, butter, olive oil... I figured since I'm asking for a good recipie I might as well give you one. So here it it... It makes 2 to 4 servings depending on how hungry everyone is. :) You need about 1/3 package egg noodles (the twisty kind) cheese (I used a mix of parmesan, 1/2 cup mexican blend, and 1/2 cup colby jack) butter olive and or canola oil about 1 cup frozen peas 1/2 onion Munchies (I used ranch) about 2/3 cup milk spices (I used a dash on onion powder and about a teaspoon or garlic powder) Cook noodles according to package, strain then stir in butter and a little olive oil until coated Add a couple shakes of parmesan, milk and spices Dice onion and saute' until caramelized Add onion, cheese and peas and mix Grease a small glass baking dish and add cruched Munchies (don't add pretzels) to the bottom Pour macaroni mixture over the Munchies Bake in oven at 350 until cheese is melted and browned around edges I covered it at first then right before it was done I took off the lid and added more mexican blend cheese It was sooooo good I recommend it to anyone. I can grill, bake, fry, or steam...
I have a large family and we are celebrating the September birthday's.....? this Sunday. Everyone is bringing a dish. This years meal theme is Mexican dishes. Does anyone have recipe for a Mexican casserole made with ground beef and/or chicken? I've checked some recipe sites online, but they all seem to be the "same old, same old". (active 14 year old in track)? im a 14 year old boy in track/cross country and i run long distance although i know someone who runs alot like me shouldn't worry about calories i still do. - Breakfast: [I try to base breakfast around fiber or protein one or the other mostly] 1 1/2 cup of Fiber cereal (180 calories) 6 ounces of 1% reduced fat milk (80 calories) 13 almonds (80 calories) 6 ounces of orange juice with fiber powder (125 calories) - Lunch: [This is where i figured i needed more protein for the day] An apple with penut butter (estimate around 140 calories?) Mexican casserole with chicken, black beans, and a variety of peppers (300 - 400 calories) Crackers and penut butter (around 180 calories) Grapes and almonds throughout (60 calories) V8 drink (35 calories) - Snack: Gatorade (50 calories) <{==Went running for about 7 miles throughout my community with alot of hills==) (burned around 600 - 700 calories i estimate) - Dinner: We went to Dickey's which is a barbecue place for St. Patrick's Day Had a brisket burger (probably around 400 calories but i didn't care because i ran alot today) Green beans (80 calories) Pickles (20 calories) Broccoli/Cali flower/Tomatoes (100 calories i think) Drinks like High C, Lemonade, and water (100 calories id say) Then i had a bowl of icecream (250 calories) ------------------------------------------------------------------------------------------- That's pretty much it i think, i had about 4 - 5 servings of vegetables and about 3 servings of fruit. Had about 16 cups of water estimated total for today, and i had multivitamin in the morning. I know i didn't eat perfect but it was a holiday and i did run 7 miles with hills so i wasn't too picky about what i ate today. What do you guys think, good, okay, or horrible? And i don't eat alot compared to alot of the runners i know hehe :p i usually eat under 1900 calories average

HELP! :) I'm learning how to cook and need recipes! :)? I just moved from home this summer and I'm learning how to cook. I can cook obvious things like tacos, spaghetti, mac and cheese, you know, the basics. I've learned how to make Mexican Chicken (rotel chicken), tater tot casserole, and loaded potato soup; however, I'm getting tired of those! Is there anything else that is cheap and simple to make?!
What can I make for dinner with these ingredients? I have some lean ground beef, white rice, peas and carrots, corn. I have no cream of chicken or no cream of anything soup for that matter. I have chicken broth, some shredded mexican. I might have a few other things laying around that might go with that...a casserole of some sort perhaps? Any ideas?? Getting sick of the same thing every week.....? We eat throughout the month.. I consider myself a fairly decent cook..(nobody's died from it...lol) so if you can give me some fresh ideas of what to cook, I'd be so greatful!! Pasta & Casserole? Anyone know some great pasta and casserole receipies? I cook dinner for my boyfriend since he works 7 to 7 and his mom cooks dinner at like 5 so he misses out. (We're only 18, freshly graduated) I am a pretty good cook but I want to try some new things. We have steak, homemade chicken noodle soup, fried summer sausage and potatoes, homemade pizza, and spaghetti quite a bit. What should I have for dinner on my birthday? I want something a bit classier than fried chicken or chicken casserole, but not anything too expensive. I'd like to have a really REALLY delicious dinner for my birthday, but I'd also like for it to be relatively easy and quick to make (3 hour preparation max, preferably around 1 hour.) I'd like something a bit exotic, like traditional mexican, european, or asian food, but there has to be some side dish for my family members that don't like anything but traditional meat and potatoes. My family usually has baked potatoes, frozen veggies, bread, meat and bagged salad for dinner. I am in between baking goodies for our Thanksgiving feast...? Anyone else doing some Thanksgiving baking? I am making Paula Deen's Pumpkin Pecan Pie and a Pumpkin Gooey Butter Cake. My father has requested that I bring my famous cheese and chicken enchilada casserole - so that's next! I'm not sure when that got started, but one year he asked for ONE mexican dish along with all of the other traditional dishes...he likes my recipe best. I'm also bringing my famous homemade yeast rolls. Next year, it's at our house and I will be doing the majority of the cooking and baking! What are some easy, healthy, quick dinners I can make for my family? (Read details!)? My mom is a fabulous cook who has raised us to eat vegetables with almost every meal (french fries don't count!)...but she left the family. Now I am the only woman in the house. I am seventeen years old, living with my dad and my sixteen year old brother. I did not inherit my mom's culinary skills at all. I burn macaroni and cheese for crying out loud, and my cornbread is so hard it bounces off the floor...anyway, I'm going crazy. Dad can't cook anything but sausage and biscuits. Little brother loves to cook (he has already taken culinary classes) but he only wants to cook for himself. So Dad went to Wal-Mart and bought a cart full of "groceries"--frozen pizzas, frozen chicken nuggets, frozen french fries, hot dogs, Fudgesicles, Hot Pockets, sandwich stuff, and vienna sausages. Which is fine for every once in a while. But a frozen pizza once a day? I can't take it. I need my vegetables--peas, beans, greens, everything--and I need my protein. I literally feel sluggish because I haven't had a green vegetable in a couple of weeks. I'm the only one who is willing to cook...except I can't cook! I've attempted, and nothing works. I have tried pasta, and had moderate success, but my dad doesn't like pasta. I have tried burgers (a turkey burger for myself because I don't eat beef) but I really have issues with handling raw meat. I was gagging the whole time I handled the ground beef, and while they were cooking, my patties all fell apart so my dad and brother had to eat sloppy joes without the sauce. I've also done Hamburger Helper, but once again, the meat is an issue. So--do you have any ideas for easy, healthy, quick dinners that anyone can cook? I need to make sure we're all getting our nutrients, and I'm in all AP classes so I don't have time to make something elaborate like meat loaf because I have so much studying to do. My family really likes: Chicken Pork Mexican and Asian cuisine Vegetables...lots and lots of vegetables Casseroles Southern foods--fried chicken, chicken pot pie, black eyed peas and ham, red beans and rice, etc. We're not picky eaters--I don't like beef or fish and Dad doesn't like pasta. Difference between American and U.K. food? I've got some friends from England coming to stay with me in the United States. I'd like to cook them some typically American meals, and since they'll be at my house I'll be cooking. The problem is, so much of American dishes are variations from existing European meals. I've been looking the differences up, but they seem to run together; except for obvious differences like Welsh rabbit, Irish stew ect. Any suggestions on what I should cook? I'm a Northerner so I don't cook much Cajun food or Southwest/Mexican dishes. The only spicy Cajun dish I cook is Cajun fettuccine alfredo. I've came up with some potential dishes that tend to be more American or at least have a different take of the meal than in Europe. How do any of these sound?: Barbecued ribs and mashed potatoes Parmesan baked chicken Chicken cordon bleu casserole (ham, chicken, cheddar and noodles) Pot roast w/ potatoes and carrots That Cajun fettuccine alfredo Hamburgers and fries or baked potatoes Not really cooking, but have the ingredients to make their own tacos Peach or apple cobbler Grasshopper pie! One dish meals...........Ideas please!? I have a 10 month old son so sometimes its hard to cook, so I love one dish meals that are healthy and are a large size so I can easily heat up left overs. How to cure teen picky eating? i have been a picky eater since i was about 6. im now 12. my mom is a dietitian but she cant find a way to make me eat. i only eat: cereal, all fruit, plain chicken, pasta with marina sauce (no meatballs), steak, cucumbers, cooked carrots, yogurt, JUNK FOOD, mozzerella sticks, pizza (sometimes), bagels (no creamcheese), clams, mussels Things i WONT eat: sandwiches, turkey, ham, rice, cheese, ketchup, mustard, pesto, parmesian chicken, hamburgers, hot dogs, bacon, sausage, casserole, spinich, meatloaf, soup, chowder, chili, fish, almost any meat, almost any asian food, mexican, fritos, guacamole, salsa, nachos, any condiment, stew, nuts, barbecue tomato, squash, lettuce, peppers, meatballs... there are a lot more i really want to eat normal food, because everyone in my family and school make fun of me. i lie to my friends, and am thinking about becoming anerexic. i know i disappointing my family, and my mom tries to cook new things, but i won't eat. help!!
To all of you cooking experts... I need some tips? Yesterday, I cooked a chicken in my crock pot with tomatoes, peppers, onions, spices etc. with the intention of making chicken tacos for dinner...Well, as life sometimes does, things didn't go according to plan and due to a family crisis, we ended up doing something different for dinner. The weather here just turned unexpectidly cold so tacos don't sound good, but I was thinking about turning it into a casserole of some sort, still keeping with the mexican theme. I have Corn & flour tortillas, the cooked chicken, sour cream, cheese, etc... any ideas on how to make this into a new meal? I was thinking that I may just layer corn tortillas, chicken, sour cream and cheese and bake it until it's warm and bubbly, but maybe someone here has some better ideas? I'd like to make something special but that I can whip up after work... Thanks in advance! BTW - I do have other ingredients that could be included -so don't limit yourself to the ones I have listed... it would take forever to list ALL the stuff I have on hand LOL!
Superbowl Appetizer Recipes? Any great tried and tested recipes out there? I'm always looking for a new favorite! Here's one I am going to try: Buffalo Chicken Dip 2 cans shredded chicken 2 8-oz packages cream cheese 1/4 - 1/3 cup hot sauce (Franks, Buffalo sauce, etc.) 1 cup ranch dressing 1 1/2 cup shredded cheese (I'm going to try mexican) Layer cream cheese at bottom of casserole dish, mix other ingredients separately (except cheese) and spread over cream cheese. Cover top with cheese, heat in oven at 350 until cheese is bubbly. Let me know your suggestions for other recipes!
Ideas for leftover spiral sliced ham? I already searched the other poster's questions and none have seemed to leap out at me. I have 2 bags of this awesome sliced ham and a ham bone with plenty of meat on it for a bean soup later. Seven (long) years ago? I had a book report in middle school that required bringing in a dish from the country the book was based in. I had to make a mexican dish...well I got my neighbor to help me (she moved away a while ago) and now me and my mum can't remember the recipe! I've looked everywhere but I don't know what it was called, and I think we altered it a little bit so that I would eat it (picky eater lol). Anyway, in it was shredded chicken, sour cream, corn, (I think maybe some milk or cream, and some mexican cheese). It wasn't tortillas or enchiladas or anything like that, I think it was more like a casserole. If anyone has ANY idea what I'm talking about, please please PLEASE let me know lol I've been dying to make it again because it was so good the first time.
What kinds of foods do Americans like to cook at home? Aside from holidays of course. I know Americans like turkeys with stuffing and cranberry sauce on special holidays like Thanksgiving and Christmas. And I know they like to order takeaway pizzas. But what do they cook at home? I've heard Americans are really big into microwave dinners (like Healthy Choice and Hot Pockets) and I also know they like to cook Hamburger Helper casseroles and sh-- like that. I know some of them like to stir-fry vegetables and chicken and similar. Most Mexicans seem to think that Americans eat nothing but McDonalds, but I know this stereotype is not true. I just wish I could convince the Mexicans. I'm guessing that most Americans probably don't like couscous or plov or other ethnic foods which I find scrumdiddly-umptious. And I know Americans don't really like all ethnic foods in general except for maybe Chinese, Mexican and Italian.
out\-of-the-ordinary Dinner recipes? I'm in a slump of cooking the same foods within a 2 week time period. I prefer making what I can homemade. Here are the usuals: Fried, grilled or baked (in cream of mush soup) pork chops, HOMEMADE spaghetti (the sauce) with store-bought but fresh refrigerated noodles (so much better and only take 2 min to boil!) Hamburger gravy over mashed potatoes, chicken stir-fry, beef barley soup, homemade chicken noodle, homemade chicken fettucine alfredo, I also have to cook alot of traditional mexican foods since my b/f is hispanic... I don't need any taco recipes! lol. I love Greek food-gyros-stuffed grape leaves, hummus and pita & tabouli. I love seafood(scallops, shrimp, cod, halibut, salmon, tilapia) but I don't cook too much fish I'm hoping I can get some yummy recipes-not so much casseroles please!! More like homemade things(ie: chicken fried steak, beef tri tips...etc) I'm on a budget so nothing too fancy or with 100 diff ingredients.
ideas for dinner? im getting bored making the same things all the time. i like to cook two good meals on the weekends and during the week me and my boyfriend fend for ourselves cause of our wierd work hours. i have a full kitchen and crock pots and i like to try new things. were not a big fan of onions or sea food. we make alot of things with chicken and beef. i make alot of pastas and lasagnas. my boyfriend has been in this spicy kick and loves mexican food like enchalatas and things like that. i want help coming up with something different to cook this weekend. please help.. soups? casseroles? maybe a different way to prepare chicken? sandwiches? crock pot classics? anything would definately be appreciated:) thanks:)
I am looking for a few Authentic Mexican Recipe's.? I will be preparing enchilada's for 20 people. I would like to make half of them beef and half chicken. Please share your recipe's with me. I want them to be true authentic enchilada's. I am also preparing Mexican rice and refried beans. Those recipe's are also greatly appreciated. I am also considering Enchilada casserole rather than rolled enchilada's if there is a good recipe. Thank You!
