Should I put uncooked chicken on top of rice? I need to make a really big casserole for a memorial ceremony? My husband is in the army. He will be comming home from a 15 month tour of duty in a couple of months, but anyway..recently we lost 2 soldiers in his company to a suicide bomber. We are holding a memorial ceremony for them here on base and the wives from the company have all been asked to bring a main dish for the reception. It needs to be large enough to feed about 40 people. the wives from other companies will be making side dishes. (we're stationed in Germany, so picking something up isnt an option) I decided that I'm going to make a chicken noodle casserole, but in order to make enough for 40 people I would need to make about 5 of these. I have a 3 month old baby, and there is no way that I can handle him and 5 casseroles too. I was thinking about preparing the casserole in 2 large aluminum turkey roasting pans instead of 5 13x9 inch baking dishes since that would be easier to carry..but I'm not sure if roasting pans will hold all of the food even though they're deeper. Sandwiches got old pretty fast so I found some cheap ramekins (single serving casserole dishes) and have been making those as an alternative. Our favorite is Shephard's Pie (browned meat with onions, sometimes carrots & peas, topped with creamed corn and mashed potatos and baked) but we don't want it all the time. I'm looking for your best casserole recipes that can be divided in this way. They must be... A) easy - if it involves an hour chopping and preparing I know I'll never do it B) cheap - preferably with ingredients most people have on hand. If it needs some strange spice that is only available in one import store then I doubt I'll be able to try it C) tasty - we like most kinds of meat but the hubby will not eat tuna period. Can you freeze cooked chicken that had been previously frozen while still raw? I checked on here, and got mixed answers. I'm talking about the frozen chicken breasts grocery stores sell in bag. Can I thaw them, then cook them, and then freeze the cooked chicken and still be able to reheat is safely once it's thawed? And if so, what's the best way to freeze and avoid freezer burn and dry chicken. I'm planning on freezing diced chicken breast for salads, casseroles, to make dinner preparation easier.

Quick, but nutritious recipes for my picky, skinny 16 year-old boy? My son is now 6'4" and only 145 lbs.! He used to be quite picky about EVERYTHING, but now says that he will eat more if it's "home-cooked"! He likes spaghetti and chicken-rice casserole. Still, I must admit I HATE cooking! I was forced to cook for my family of 7 starting at age 13 and it burnt me out. But I want my son to gain weight and eat right. Can you put any food combination in a casserole? I don't cook much and I need things fast and easy for my husband so I tried steaming rice, chicken, brown sugar, garlic, water and cheese in my steamer, but, the steamer kept shutting off because of to much chicken or to little water. Hello, I am really bad at counting calories, would you say this sample diet, assuming portions are controlled,is between 1200 and 1500 calories? Breakfast old fashioned Oatmeal 1 serving, ½ cup of apple sauce Teaspoon of smart balance and 2 teaspoons of splenda Lunch 2 eggs over easy 1 slice turkey 1 oz low fat mozzarella cheese Afternoon snack – 15 cashews Dinner 1 serving of Chicken Broccoli casserole (contains alfredo sauce, broccoli, carrots, chicken, mozzarella cheese)Sugar free Jello I know I will lose weight at least at first because I am used to eating a lot more, but I want to make sure it is enough calories and not over 1500. I am not on a low carb diet per se but am watching carbs so no white stuff in my diet. My goal is to lose 100 pounds by 2009. I have started walking 10 minutes 3 times a week and 20 minutes windsor pilates 3 times a week. I am as out of shape as you can get and according to a BMI chart, my BMI is 43. Am I on the right track to start with?

What should I have for dinner on my birthday? I want something a bit classier than fried chicken or chicken casserole, but not anything too expensive. I'd like to have a really REALLY delicious dinner for my birthday, but I'd also like for it to be relatively easy and quick to make (3 hour preparation max, preferably around 1 hour.) I'd like something a bit exotic, like traditional mexican, european, or asian food, but there has to be some side dish for my family members that don't like anything but traditional meat and potatoes. Could you please help me think of something really special I could ask my family to make for me? Thank you! Perhaps I wrote my question wrong. My family usually has baked potatoes, frozen veggies, bread, meat and bagged salad for dinner. I want something a bit different than that-something a bit more planned than a bunch of things tossed together. for example, maybe meat ravioli with garlic bread and some vegetable that makes sense with that-maybe spinach? I'm just basically looking for some good ideas for meals that make sense and are almost guaranteed to be good. I can't go to a restaurant-we really don't have the time.

freezing casseroles and pot pies? Could anyone offer advice on pot pie fillings that freeze well. I would LOVE to add some wild rice to some rather than potatoes, any thoughts on that? Curious if they would reheat dry or no. Trying to make a few freezer meals for a guy who is now alone, plus we could use these as well! So far I have some classic chicken pot pies & turkey pot pies. Also wondering about wraps and freezing those filled with somehting yummy that can be tossed in the oven for a quick meal. was thinking of using chicken, pesto, mushrooms & sundried tomatos as filling, too. Wondering if anyone knows if I could add rice easy enough or has a suggestion for that combo in a pot pie or wrap?? THANK YOU!!! I should elaborate maybe - I don't need help reheating really, I need help with a recipe to make these. I don't use a microwave so they will be reheated in an oven. I am basically making a whole bunch of meals so we may freeze and reheat throughout the month, I am giving some away so any help is appreciated!
