What to do with bone in chicken breasts?
I'd like to bake them, but I don't want to just 'bake' it....as in plain boring baked chicken. Anyone have any yummy baked chicken recipes? I don't want to do a casserole, just some yummy ingredients and then toss it in the oven. Thanks! I should add that both my dd and I are lactose intolerant, so anything with milk/cheese is out...

- chicken is one of those things that you can marinate and then bake and have a delicious dinner. My hubbys favorite is to put the chix in a baking dish, add 1 can of cream of whatever soup you like, sprinkle with bread crumbs and bake until done, golden and bubbly and he serves his with rice. I like to do mine a bit differently. Make packets of heavy duty foil. double the foil, place a chicken breast in the middle of the foil., season with salt, pepper, lipton golden onion boxed soup ( spilt between 6 pieces of chicken) add some cut up potatoes. carrots, onions etc, add a pat or 2 of butter and seal the packet well. Bake on a cookie sheet (with edges) in case of leakage and bake at 400 for 25 minutes, check on packet beware of the steam and serve with a salad and crusty bread. good luck
- Try this... Mix 1 tablespoon curry powder (red or yellow will work) with 1/4 cup each of honey and mustard. Pour this mixture over your chicken and bake at 350 degrees for about 45 minutes.
- Bone in and skin on breasts have the most flavor and rarely dry out. I make chicken parmesen with them. Lightly flour seasoned chicken, pan fry and add a jar or spaghetti sauce. I like to add cheese, but you can omit. Serve over pasta.
- plenty of seasoning, fresh herbs if avaliable, a little oil and some lemon juice. Toss them and roast in a hot oven 425-450 for about 30-40 minutes.
