Baked Chicken?
I want to bake chicken in an oven. Anyone have any EASY recipes?

- EASY EASY BAKED PEPPER CHICKEN 6 uncooked chicken breasts 2 cups onions and peppers (thinly sliced) 2 tsp pepper 2 tsp basil seasoning 1/4 cup olive oil, separated in 1/8 cups Preheat the oven to 350 degrees. Line a deep baking pan (9x13) with foil (this will reduce clean-up time) and seal the heat. Drizzle the foil layer with olive oil to avoid sticking Sprinkle foil with some of the pepper and basil Lay the chicken breasts on the oil-seasoning mixture, spread out, and drizzle lightly with olive oil. Use a brush or spoon to distribute the oil evenly on top of the chicken Sprinkle the chicken with remaining seasoning, to taste Sprinkle the chicken with the onions and peppers. Important: Cover the pan with another layer of foil, and seal the sides. Bake for 30-45 minutes, or until the center of the chicken is no longer pink. It'll be the juiciest, most tender baked chicken you've ever had - no need for a knife. Best over rice and sauteed vegetables.
- Chicken Roast. Roast in a preheated 180C (350F) for 25 minutes per lb, add 20minutes if it is stuffed. If cooking covered or in an oven bag reduce time to 18 minutes per lb. For a crisper skin increase temperature to 200C (400F) for the last 10-15 minutes. Allow to rest in a warm place for 10-15 minutes. Stuffing. 4 onions, 2 Cups of bread crumbs, 40g (1.5 ozs.) melted butter, salt, pepper and powdered sage to taste; 1 egg or a little milk. Combine.
- The easiest way is to rub the chicken with butter (yes, butter it will make the skin nice and crispy!) Place it on a roasting rack in a roasting pan, cover it with lid or foil. Bake for about 2 1/2 - 3 hours at 325 degrees (for a 3-4 lb chicken) Remove the lid / foil for the last 20 minutes.
- I have a general suggestion for baking chicken in sauces which makes it extra juicy. I cut up and freeze the chicken. Then when I cook it I first brown it under the broiler - both sides. This will make the skin perfect and also free up some juices and fat but the center is still frozen. I remove the chicken pieces, then use the pan renderings to make or mix in the sauce and heat it up to almost bubbling, then put back the chicken, stir, and finish cooking (baking) it at only about 310 F.
- Flour your chicken and brown it in a pan with oil. Remove from pan and put into casserole with Campbells cream of mushroom gravy and bake at 375 for about half an hour. After half an hour you can add brocolli, corn, beans or whatever vegetable u desire and continue to bake for another half hour. After a total of an hour it should be ready to go. I love it with brocolli!! You can also use Campbells Golden Mushroom gravy with a can of tomato soup.1 can each and mix, then pour over chicken. Its a very simplle recipe. Hope it helps.
- Salt and pepper the chicken. It is better if you cut it in half lengthwise. Place a couple of Bay leaves inside the skin of the thighs or a rosemary sprig under the whole half. Squeeze half a lemon on each half and dot with butter. Bake at 350 degrees for about 1 hour covered and remove cover for the last 30 minutes, one and a half hours total time. The chiken will be ready when you pierce the thigh and the juices run clear.

- Spinach & Herb Baked Chicken Ingredients 2 Tbsp. Spinach & Herb Dip Mix 1 cup breadcrumbs 1/2 cup mayonnaise 3 - 4 boneless, skinless chicken breasts Directions Combine Spinach & Herb Dip Mix with bread crumbs. Place mayonnaise in separate bowl. Coat chicken with mayonnaise; then place in crumb mixture. Coat both sides of chicken breast; place in baking pan. Bake at 350° approximately 30 minutes or until no longer pink in the middle. - Use boneless/skinless chicken breasts. Preheat oven to 350. Put dried beef on bottom of dish. Place chicken in baking dish, size accordingly to how many pieces you are cooking. Then add bacon/turkey bacon to the top of the chicken. Pour can(s) of Cream of Potato soup over top. Cover with foil, bake for an hour. A good side dish for this meal is long grain white and wild rice. Uncle Ben's has that in one of those "90" second rice bags. Or if that's too fancy, I've also made that dish with just the chicken and cream of potato. Either way is yummy! Enjoy!
