dry chicken recipe (without oil / very less oil)?

My husband likes dry chicken, ( tandoori / baked in oven , without oil / very less oil. I want to make it at home but i don't have a oven or tandoor. Can anyone suggest some recipe according to his taste or similar to it.

  4. Cook garlic and onion in a pan using red wine to stop it sticking, add diced chicken, it will absorb moisture so won't be so dry. Just don't overcook it, add bottled tomato pasta sauce, simmer and pour over pasta. no oil. Otherwise get a george foreman grill, you're not supposed to need oil, and a lot of the fat in the chicken will also come out.
