how would this sauce taste? dijon, lime, onion?
ok, so tonight i found a simple recipe for shredded oven baked chicken, topped with a sauce of sauteed onions, dijon mustard, lime juice and green olives all served with rice. im afraid the mustard might be overpowering. anyone have something similar to this before and know what it tastes like? or even better, does anyone have a similar sauce recipe i can make for the chicken and rice? and whats one more side dish besides the rice and salad to serve? THANKS!

- an extra dish could be a citrus dish maybe like some orange grapefruit salad. And in the sauce replace lime with lemon.
- Dijon is a very mild mustard that enhances the flavour of lighter meats such as chicken and pork. Personally, I would think about leaving out the lime juice, as this will add a sharpness that won't really go with sauteed onions, olives and Dijon. Maybe a little lemon juice instead or, better, some reduced (boiled down to half the amount you started with, until it's syrupy) balsamic vinegar, stirred into the onions when they're on the last 5 minutes of sauteeing. As for side dishes: a baked potato, couscous or bulgar wheat, oven-roasted vegetables (simply cut into slices some courgette (zucchini), aubergine (egg plant), capsicums (bell peppers) and roll them in olive oil, salt and pepper before roasting for about 45 mins in a hot oven, turning once or twice). - sounds pretty good. maybe add a bit of cilantro? hmm maybe that wouldnt be good with dijon.
- mix two sauces in there,leave the mustard out of one.
