Kid-Friendly Recipes with Chicken Breasts and Rice (or Potatoes)?
I need something to make using chicken and rice or potatoes. These kids don't like casseroles. Know of any recipes?

- all kids like chicken on a stick. Slice the breasts in strips and skewer them. You can grill or saute the chicken. OR make Chicken Kabobs (chance to add some veges) with lemon herb rice or mashed cheddar potatoes.
- Chicken and rice soup.....or bake the chicken and cube the potatoes.....put the potatoes in a bowl with a little oil and mix.......add one packet of cheese(the kind from the mac and cheese) and toss to coat. Bake at 350 for about 30 min.

Wrap 1 slice bacon around each half chicken breast. Place a layer of dried beef in bottom of a baking dish. Arrange bacon-wrapped chicken on beef slices. Combine chicken and mushroom soups, sour cream, cream cheese, pepper, curry powder and poultry seasoning and pour over chicken. Cover tightly with foil. Bake at 325 degrees F for 2 hours. Heat through, then set aside. To Make Rice: In a large saucepan, bring rice and remaining 2 1/4 cups broth to a boil. Reduce heat, cover pan and simmer for 20 minutes. Stir in remaining 1 1/4 cups picante sauce, cover and simmer for another 5 to 10 minutes or until rice is tender. Meanwhile, preheat oven to 375 degrees F (190 degrees C). To Assemble Burritos: Stir chicken mixture into rice, then add olives and 2 cups of the cheese. Mix well. Spoon 1 cup of filling onto each tortilla, off center. Fold sides and ends over filling, then roll up. Arrange filled tortillas in two 9x13 inch baking dishes and sprinkle remaining cup of cheese on top. Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until heated through.

- well every kid likes chicken fingers and fries. Or roast in in the oven with the potatoes.
- how bout a twist, make chicken tenders but and one packet of hidden valley ranch packet -1 teaspoon to your flour and the teaspoon of the ranch seasoning to your eggs and milk. You could fry or bake. Serve with garlic mash potatoes and ranch dressing to dip
- My kid always liked 'clean' food when she was little, that is without casserole-like sauces. I often make Mexican style chicken breasts with rice: take the chicken (you can slice it if you want) and just fry it in a greased frying pan. Squeeze some lime over the chicken. Add some salt and, if they like it, some fresh cilantro/coriander. That's it! If you want you can add some veggies, tomatos, red bell peppers, zucchini... I usually just serve the chicken with plain rice and a nice sallad with lots of fresh and crispy veggies on the side.
