Chook Me!

Looking for a "comfort food" recipe, ingredients: lentils, rice, and chicken?

My husband has a cold. We are both tired of soup. I have some dried lentils, chicken, and rice on hand. Do any of you have recipes to share that incude all 3 of these ingredients? I'd prefer to not use raisins, dates, or tomatoes this time.

  1. mouth watering
  2. how about a nice hot stew?? we do it in my place; put all your ingredients together with a few cloves of garlic(super good for colds) and salt and water in a pressure cooker and cook. when it is ready put some butter and pepper and voila!! (may your hubby have a speedy recovery)
  3. There are many sites where you can list the ingredients you have and it will tell you what you can make. http://www.thriftyfun.com/recipes.ldml this site is just one of many
  4. Cook rice, set aside. Small pieces of boneless chicken marinate with ginger, onion and garlic (paste) little oil and yoghurt (4 hours). Wash lentils. Heat oil in a pan, fry chicken pieces when almost tender add lentils go on frying for a while, Add green chillies/ black peper, salt and suger to taste. Add rice continue stirring, add little hot water and simmer for ten minutes. Serve hot.
  5. ***Onion lentils and rice*** http://www.recipezaar.com/30698 3 tablespoons olive oil 3 medium onions, sliced (not diced) 3 1/2 cups water 1 cup lentils 1 cup rice 1 teaspoon salt 2 teaspoons cumin Heat olive oil in skillet, saute the onions with 1 tsp cumin until lightly browned (can add some garlic too, if desired). Remove 1/3 of the onions and set aside. Continue cooking the rest of the onions until dark brown and black in places. In the meantime, bring water to a boil in a saucepan, add the lentils, reduce heat, and cover, simmering for 15 minutes. To the lentils, add the 1/3 lightly browned onions, rice, salt, and remaining 1 tsp cumin. Cover and simmer 15 min. or until rice is tender. Remove from heat and stir in the well-browned onions. Cover and let stand for 5-10 minutes. Serve! Especially good with chopped lettuce, tomatoes, and a dollop of yogurt or sour cream on top. Also good with cooked spinach. ***If you have chicken, I would cut it up into bite size pieces and sautee them (but not cooked all the way through) before your onions and then proceed with the recipe. Add the chicken to the pot when you have to cover and simmer for the last 15 minutes. =============================================
