Side dish to go with BBQ Chicken?
I'm invited to a Mother's Day cookout ~ they are serving BBQ Chicken & I was asked to bring a side dish that would feed about 12 people. I would love suggestions with recipes, please.

- You could make potato salad, macaroni salad, baked beans, big dish of baked macaroni and cheese.....there are lots of dishes to go with barbeque chicken. Check out the site below for recipes.

- 4 slices bacon, cooked and crumbled 15 oz can pork and beans 1/4 cup chopped onion 1/4 cup ketchup 2 tbsp molassas, optional 2 tbsp brown sugar 1 tbsp mustard heat oven to 350, combine all ingredients in cassarole dish and bake uncovered for 30 to 35 minutes, or until thickened, stirring every 15 munutes. this is great for bbq's. just triple the recipe for 12 people.

- Corn on the cob, tossed salad, fruit salad, fruit bowl(diced water melon, and other melons, strawberry's, grapes, oranges, apples) or some rolls! Very simple and less expensive!
- baked beans with green pepper cut into it and a lil onion you add some maple syrup( not a lot) and some brown sugar(about a teaspoon) 2 tsp of butter and you cook on stove top for about 5 min. then put in pan and bake at 350 until bubbly or corn on the cob- Buy some frozen corn unless the corn is in season and put on a pot of water then add a whole stick of butter and add the corn cook until done(no all the butter does not stick to the corn its just for some infusing) or potato salad or spaghetti
- potato salad or baked beans sound the best, but alot of people will be bringing those because the are easy. Why not bring a desert? In a large bowl, preferably clear glass, layer store boughten angel food cake(cut in chunks), fresh strawberries(halved), blueberries and whipped topping(thawed). It's okay if the layers are loose and tend to blend together. This looks great and tastes even better. The best part of all it looks like you spent hours making it, when all it takes is a few minutes. Be sure to keep in refrigerator until serving time.

- Cole slaw goes well with BBQ chicken.... It's cooling and refreshing..
- Potato salad. I could give you my recipe, but I don't know if you're ready. BTB, it is the best potato salad you'll ever have.
- Don't know if you want it to be hot or cold... following can be served either way! VERY simple to make larger quantity, simply double or treble. For serving to others I would bake them in disposable aluminum pans (turkey sized; bake doubled up [one inside the other] TWO pans on top of a cookie sheet to give the pans stability when moving them into or out of the oven) bake them as described below. Either take the pans (covered in foil) to the party and serve out of the tins OR transfer into one or two large crockpots to plug in at the party to warm them through. Old West Baked Beans This slow-baked molasses-and-mustard-flavored western favorite is a perfect party food because it can be made days ahead and just gets better with time. 1 pound dried navy, pinto or pink beans Soak the beans overnight in water in a large bowl. Be sure to pick through the dried beans first for any shriveled ones or stones. OR If you want to make beans immediately, use 1 large jar/can of Great Northern Beans, drained and rinsed, and move straight to the prep stage (omit overnight soaking). 2 large onions, diced 12 ounces smoked pork or ham steak, chopped 3 cups chicken stock, NOTE: reduce to 2 cups stock if not using dried beans 1/8 - 1/4 teaspoon cayenne pepper (to taste) 1/4 cup dark molasses 1/4 cup ketchup 1/4 cup dark brown sugar, plus more as needed Salt and pepper Preheat the oven to 375 degrees F (gas mark 5). Saute the onions and pork over medium heat in a cast iron Dutch oven, (or any heavy bottomed pot with a good fitting lid that can go into an oven), until the onions are tender, about 10 minutes. Add the drained beans, pork, chicken stock, cayenne, molasses, ketchup, brown sugar, and salt and pepper to taste and bring to a boil. Cover the casserole, (use foil if necessary to make a tight-fitting seal), and transfer to the oven. Bake minimum of 3 1/2 to 4 hours, until the beans are tender. Serve topped with a sprinkle of brown sugar.
- oh lucky u... well, my personal fave considering u have that excellent bbq sauce i'd easily spice up some potatoes. Spicy potato wedges, and sour cream. Aye, tastes lovely that does!
- Baked Beans and Eggs Salad These are my measurements for one tin of baked beans(feeds four) 3 boiled eggs chopped fine. 2/3 green chillies finely chopped. 2 scallion stalks finely chopped. 2 to 3 tbsp mayonnaise. 1 each of red yellow and green bell peppers finely chopped. Mix all these ingredients and refrigerate overnight. Enjoy the BBQ.
- Fried Cow's Udder Ingredients (4 servings) 4 pounds of Cow's udder 1 Egg, beaten Plain breadcrumbs 7 Tbsp Butter Salt Pepper Instructions In order to remove all traces of milk, put the udder into lukewarm water and let soak for 2 to 4 hours, permitting the water to cool off. Then cook the udder in a 2-percent to 3- percent salt water solution until tender. Remove from the cooking liquid and cut into 1/2-inch thick slices. Let the slices dry a bit. Season on both sides, dip into whisked egg, and then into breadcrumbs. Fry in butter, turning once, until golden brown on both sides. Serve with lettuce. Serves 4.

- Homemade baked beans, plain rice, cassaroles that anyone would like such as green bean cassarole.
- Hash brown casserole 2 packs frozen hash brown (not thawed) 1 melted stick of butter 1 can cream of mushroom 1 can cream of chicken 1 small tub sour cream 1 small bag of shredded cheddar salt and pepper to taste garlic powder Mix together hash browns and melted butter. Add soups, sour cream, cheese and seasonings. Pour into a greased 9x13 casserole dish. Bake at 350 degrees for 40-45 minutes. You want it to be brown and bubbly. Variations: add cheese to the top top with the onion ring things like in green bean casserole top with crushed corn flakes and drizzle with butter add chicken or tuna to make a meal
