Question about Crockpot King Ranch Chicken Recipe?

I am planning to try cooking the recipe listed below tomorrow. I found boxed/powder tapioca made by jello, but none of the tapioca's mentioned that they were "quick cooking". Is the powder kind correct, and do I need to cook it first or just mix the powder in? Also with the can of rotel tomatos/chili's -- do I drain the water out or keep the water in? Sorry if these are dumb questions I'm new at cooking! Thanks so much. Recipe: 3-4 c. cooked, diced chicken 1 pkg. (10-12) flour tortillas 1 med. onion, chopped 2 (10 oz.) cans cream of chicken soup 1 can (1 c.) tomatoes & chilies 4 tbsp. quick cooking tapioca 4 c. grated Cheddar cheese In a large bowl mix chicken, soup, tomatoes, chilies and tapioca. Rip 2 to 3 tortillas into pieces and line the bottom of a 5 quart crockpot. Add 1/3 of the chicken mixture; top with 1/3 of the onion and cheese. Repeat layers of tortillas, chicken mixture, onion and cheese two more times. Cover; cook on low for 6-8 hours.

  1. yes the tapioca will work fine.......also, add the whole can of the rotel tomatoes and chili's.......sounds like a really good recipe...good luck
  2. Don't cook the tapioca--it's for thickening Leave the juice in from the tomatoes Sounds Yummy
