Need a good healthy chicken recipe..?

I have boneless, skinless chicken breasts and need to make a healthy dinner tonight. All I really have to work with are a few spices. It's got to be something I can either bake or pan fry because my grill isn't working. Any ideas? What temp do I bake at?

  1. pasta bake? you could fry the chicken with healthy oil, chuck a few spices and tomato puree and tomato chunks (tinned) get your pasta done and throw it all together and top with grated cheese bake it and serve with brocilli pretty healthy and lovely tasting i must say!
  2. You said Healthy right? OK..first of all you should boil the chicken in water and salt for about 5 min. Remove, pat dry with Scott towel and then transfer them into a shallow baking dish that has been lightly buttered or "PAM" Sprayed. If you have any lemon juice then put some on the chicken or any light salad dressing works good too. Add all your spices , cover and bake for 30min. serve with a salad or with white rice or even couscous. Bon appetit!
  3. take your chicken breast and season it with your favourite flavors, salt,pepper,basil,summer savory....whatever..bake it in the oven ...when it's 80% done brush it with a bit of bar b-q sauce if you have it ...if not...that's ok too....let it cool...cut it in strips and place it on a nice dressed salad...a piece of bread and your all set!

I make a chicken soup for my family that everyone raves over, and it's actually very simple and inexpensive. boneless, skinless chicken breasts (preferably never frozen) 1 package angel hair fideo noodles salt pepper fresh cilantro canned jalapeno juice fresh limes boil water, salt, and chicken breasts until the meat is white. Shred the chicken and put back into the pot, adding the package of fideo noodles. When the noodles are done, your soup is ready to serve. Have cilantro chopped up in a bowl on the table, along with slices of lime and a dish of jalapeno juice that can be spooned into the bowl. Each of these fresh items will be added to taste by the person who is served. Serve with hot corn tortillas.
  6. Super healthy & lowfat! Trim and flatten the chicken. Salt & Pepper. Season to preference with anything. Bring 6 cups of chicken broth, water, whatever seasonings to a rolling boil. Either stuff breast with spinach or cheese or anything else you like, or leave it empty and roll it to a fat log . QUICK CHICKEN WITH GARLICKY CITRUS SAUCE (Mojo Pan Sauce) 4 boneless skinless chicken breast halves 1/2 tsp. plus1/8 tsp. salt, divided 1/2 tsp. plus1/8 teaspoon freshly ground pepper, divided 2 tsp. cumin seeds 4 tbsp. olive oil 8 large garlic cloves, minced 1/2 c. fresh orange juice 4 tsp. lemon juice 4 thin orange slices 4 thin lemon slices 4 tbsp. chopped fresh parsley, divided Sprinkle both sides of chicken breasts with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper. Press cumin seeds into both sides of chicken. Heat oil in large skillet over medium heat until hot. Add chicken; cook 7 to 9 minutes or until golden brown and no longer pink in center, turning once. Place on plate; cover loosely with foil. Add garlic to skillet; cook and stir 30 to 60 seconds or until fragrant. Add orange juice, lemon juice, orange slices, lemon slices and 2 tablespoons of the parsley. Bring to a simmer, stirring to scrape up any browned bits from bottom of skillet. Stir in remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Serve chicken with sauce and spoon lemon slices and orange slices over chicken, if desired. Sprinkle with remaining 2 tablespoons parsley. 4 servings. CHICKEN WITH LIME SAUCE 4 (6-oz.) skinless, boneless chicken breast halves 1/4 tsp. salt 1/4 tsp. ground black pepper 2 tsp. olive oil Cooking spray 3/4 c. fat-free, less-sodium chicken broth 1 tbsp. brown sugar 3 tbsp. lime juice, divided 2 tsp. Dijon mustard 2 tbsp. water 1 tsp. cornstarch 1 tbsp. butter Place each chicken breast half between 2 sheets of heavy-duty plastic wrap. Pound to 1/4-inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add chicken and cook 4 minutes on each side or until browned. Remove from pan; keep warm. Add chicken broth, sugar, 2 tablespoons juice, and mustard to pan. Cook over medium heat, scraping the pan to loosen browned bits. Combine water and cornstarch in a small bowl. Add cornstarch mixture to pan. Stir well with a whisk. Bring to a boil over medium-high heat. Cook 1 minute or until sauce thickens slightly. Whisk in remaining 1 tablespoon lime juice and butter, stirring until butter melts. Return chicken to pan. SWISS MUSHROOM CHICKEN 4 boneless skinless chicken breast halves (4 ounces each) 1 egg 1 cup crushed butter-flavored crackers (about 25 crackers) 3/4 teaspoon salt 1/2 pound fresh mushrooms, sliced 2 tablespoons butter, divided 4 slices deli ham or thinly sliced hard salami 4 slices Swiss cheese Flatten chicken to 1/4-in. thickness. In a shallow bowl, lightly beat the egg. Combine cracker crumbs and salt in another shallow bowl. Dip chicken in egg, then roll in crumbs; set aside. In a large ovenproof skillet, saute mushrooms in 1 tablespoon butter until tender; remove and set aside. In the same skillet, cook chicken over medium heat in remaining butter for 3-4 minutes on each side or until juices run clear. Top each chicken breast half with a ham slice, mushrooms and a cheese slice. Broil 4-6 in. from the heat for 1-2 minutes or until cheese is melted. Makes 4 servings.
