Healthy recipe with chicken thighs?

WHat is something healthy I can cook tonight using chicken thighs or cook with the chicken thighs.... I have chopped fruit for dessert but was hoping for a healthy, delicious meal. Thanks:)

  1. 1 lemon 1 1/4 cups chicken stock 2 tablespoons honey 1 tablespoon soy sauce 3 tablespoons oil 8 chicken thighs 1/2 cup onions 3/4 cup rice (uncooked) 1/4 teaspoon pepper Grate 1 tsp of zest from the lemon, and press 1 tbs of juice. Combine the zest and juice with stock, honey, and soy sauce. Heat oil in a large wok with a cover and brown the thighs. Remove the thighs from oil and add the onion; saute until soft. Add the rice, pepper, and broth mixture; top with the browned thighs. Cover and simmer for 30 minutes or until the liquid is absorbed serve with rice
  2. Cook the thighs and pull the meat off the bone. Make pasta and your favorite sauce (pesto, tomato, oil and Italian seasoning, cream sauce). Toss the chicken meat in and heat til hot. You can mix the sauce with the pasta and meat or spoon it on each serving. Voila! Eat hardy.
  3. Quick Chicken Recipe: 6-8 chicken thighs 1 lemon 1/4 teaspoon of your fave seasoning 2 tablespoons light oil * Squeeze lemon juice onto chicken. Add oil. Heat in thighs until they're browned. Remove thighs from the oil and add the seasoning. Cover and let chicken simmer for 1/2 an hour.
  4. Remove skin and fat, marinade in honey and soy for about an hour and then bake in a medium hot oven for about 40 minutes covered add the marinade and chicken together. Turn halfway through cooking, and spoon over the marinade. The juices should run clear when squeezed. Allow to rest and thicken the juices and marinade with a little cornflour. Serve chicken with mashed potatoes, cauliflower and broccoli and pour the sauce over the chicken.
