Vegetarian food that supplies energy?
Hello, I am going on a strenuos hiking trip in 15 days with an Indian freind of mine. I will be taking food for us so we can eat and regain some energy and important vitamins and minerals we will lose hiking. Does anyone know of any Vegetarian type of food that can be packed in a backpack that will help regain one's vitamins and minerals? Any suggestions would be great. I will be taking roast beef sandwiches for myself to help me, as well as other meat/poultry like beef jerky. Something along these lines would be great. Thank you all in advance for your time Rudy

- Peanut butter? You can bring some bread and make peanut butter sandwiches.
- Why do you need a roast beef sandwich if you are a vegetarian? I`m confused.
- Hey...ok so whatever food you take with you add this to your Menu, actually every persons who is planning to go hiking for a long period of time should never leave without this: "QUINOA" is a southamerican grain like(Peru), ancient Inca meal that is composed of high content of mineral, proteins, you can actually survive on this Only!!!!! ok good luck!

- any carbs will work. Rice, corn bread (with stuff cooked in it), power bars, etc. MRE's are made for this kind of stuff. They are jam packed with calories and stuff, that's why the military gets them.

- I would take dried fruit and nuts. probably a couple of apples as they usually last pretty good. muesli and muesli bars.
- Almond butter and banana sandwiches on whole grain bread and a little honey. YUM!
- eh peanut butter isn't vegan by the way.. forementioning that. most veggies and fruits will do just fine... eating vegan soy products will work.. (gotta read those labels.. ) i'm sure there's vegan soy bars.. energy bars... (tho i highly question those) beef jerky? there's nothing in jerky that's beneficial. (if you buy it at the store i doubt if it's even meat) fresh is best... but if you're hiking... i doubt you can do that.. so it's suppliments.. dehydrated veggies/fruits... and soy products that are processed. oh and of course water... (if you can find fruit and soy drinks that can take the hike.. do so)
- Eating spinach before hand would be a good. You can take apples, rasins, walnuts, and granola. Stay away from anything too high in sugar. Make sure to bring plenty of water.
