Preparing chicken for caesar salad?

I'm planning on making chicken caesar salad tonight with dinner and was curious about different ways to prepare the chicken strips (that DO NOT involve a grill). One way I had read so far was sauteing the chicken in butter and garlic.

  1. That is a good method. I add Worcester sauce to give it color, flavor and a grilled look. if you are looking for less fat grill it with a cooking spray or a light coating of olive oil, some garlic, Worcester sauce, salt and pepper.

  3. - cut the chicken into strips - in a medium size bowl, mix together 1Tbsp olive oil, 1tsp garlic powder (or one large garlic clove, minced), 1/4 tsp fresh ground black pepper, 1/4 tsp salt, 1/2 tsp oregano. - add chicken strips to the bowl, so the get covered in the seasoning. - in a non-stick skillet, cook the chicken until they're done
  4. If you are prefparing it tonight I would go ahead and marinate the chicken in worstershire and red wine vinagar , salt and some freshly ground pepper. Saute' SLOWLY in butter. Take your time cooking it and cook it just until the center is done. Do not over cook the chicken. Good luck.
  5. The secret to preparing chicken breast is very high heat. You don't need a grill, just a heavy iron skillet if available. Grease the skillet with a little shortening if available. Shortening is less sticky than olive oil or vegetable oil at high heat. You want the skillet to be hot enough to sear the chicken breast on both sides. The juice in the breast should not run out in the pan. This often happens when you saute over medium or low heat. You will see water begin to accumulate in your skillet when the heat is not high enough. You should use a very thin breast if doing it whole. If the heat is high enough, it will sear the outside of the chicken, leaving juice on the inside and making it much more tender. Then you can slice immediately before serving. Use your imagination when seasoning the breast. I like to use a poultry rub I make from sage, garlic powder, salt, thyme and black pepper. I put all of those seasonings in a glass bowl and stir, then rub the mixture on all sides of the breast. Good Luck.
  6. I actually saute mine in Italian salad dressing. I put the Italian dressing right in the pan and saute.
  7. I guess you've already eaten by now... though the butter and garlic sounds absolutely lovely to me, I was going to suggest Italian salad dressing.
