how long does it take for a setting hen to hatch eggs?

I wish to raise my own chickens this spring and rather than use an incubator,i want to do it the old fashoned way.

4. A hen will go "broody" and sit on anything for 21 days almost non-stop. My bird did that once and she got very annoyed and cackled and made a racket if you got too close or touched her...a crabby hen. Finally after 3 weeks she got over it...typical woman.
