- They are unfertilized, of course. The chances that a fertilized egg slips through control are very slim.
- Two reasons - both fertilization and temperature. You can only keep a fertilized egg at refrigerated temperature for about 6 days before the embryo becomes inviable. And actually - most embryos are only viable for about 6-8 days in the first place, refrigerated or not. Not to mention - 99.8% of the eggs you purchase in the supermarket are not fertilized, so they wouldn't hatch regardless.
