left over chunks of chicken?
i have leftover chunks of chicken (from fajita's) also, shredded lettuce and tomatoes..dont really want anything mexican, so anyone have any good casseroles or dishes with chunk chicken? i am pregnant and absent-minded and cant think of ANYTHING!! help :))))) thanks in advance!

- Chicken salad sandwiches. make a salad and throw the chicken on top.
- I would add them to Campbell's Chicken Noodle soup. That would make a Hearty Soup. Add some crackers and you're set. Don't you think?
- you could mix the chicken with a little mayo or salad dressing whichever you prefer,and add some chopped celery and canned veggies and make yourself a chicken salad sandwich with the lettuce or just the salad by itself with crackers
- Try making a salad: just add some more greens, and some mozzarella cheese and either Caesar or Italian dressing. You could also add pasta, and just have a pasta salad.
- Ah, the "leftover chicken" dilemma. I recommend placing it in a dinner salad for a healthy meal. That will also use up your lettuce and tomatoes! If you want something more exciting, place the chicken in a greased pan, add some bottled tomato sauce like Prego or Ragu, top with shredded mozzarella cheese and bake for 20-30 minutes in a 350-degree oven for a "quick cacciatore." - Just make some rice and stir in the chicken and the tomatoes, too, if you want them. It's easy and filling and pretty healthy.
- You could make a stir-fry dish and add the chicken to that. Make a chicken salad with your lettuce, tomatoes and chicken. Make a pie crust and put it in a casserole dish or whatever you want. Mix the chicken with cream of chicken soup or cream of celery soup and pour into casserole. You could add a can of mixed veggies too, if you want to. And there you have a simple chicken pot pie! - why dont you use those ing. and add some cheese and croutons and make a nice salad
- get some spaghetti and cream of chicken or mushroom soup. Cook the spaghetti till done then mix the soup with milk as directed on the can then combine with the speghetti noodles and chicken. Put in a casserole dish and top with cheese. Put in oven at 350 degrees till the cheese is melted and food is heated through. Use the lettuce and tomatoes and make a salad. You can put mushrooms in the speghetti if you like them. Yummy chicken spaghetti and salad!!!
- This is so quick and easy - my husband and I have it almost every week and it even makes a good "company" dish. Chicken Potato Salad I use a can of baby potatoes, cut up to bite size a handful or so of chunks or shredded chicken some shredded beets ( well drained - but they will still turn the mixture pink) chopped onions or green onions mayonnaise mustard and whatever else you want to add... 4 bean salad - olives, chopped tomatoes, etc serve on lettuce
- Chicken Pillows 2/3-2/3 cup crushed seasoned prepared stuffing 2 (3 ounce) packages cream cheese 4 tablespoons softened butter 1/8 teaspoon pepper 2 cups cooked chicken pieces 2 packages crescent rolls 6 tablespoons butter, melted Sauce 1 can cream of chicken soup 1/4 cup sour cream (to taste) Combine cream cheese, softened butter, and pepper. Fold over crescent roll and pinch edges. Dip each one in melted butter and then roll in crushed stuffing. Place them on a cookie sheet and cook for 20 minutes at 375 degrees F. Make sauce by heating them in pan on the stove. Pour a little over each chicken pillow when serving.

Prepare stuffing mix as directed on pkg; set aside. Mix chicken and broccoli in baking dish. Stir in soup, milk and cheese; top with the prepared stuffing. Bake 30 minutes or until cooked through. Make a salad with the leftover lettuce and tomatoes.
