  1. Chicken with vegetables as I am heart healthy I put in onions yellow squash, zucchini, garlic and tomatoes all fresh yummy
  2. My mother-in-law makes a wonderful Poppy Seed Chicken. I will get it and let you have the recipe. 4 boneless chicken breast 1 can cream of chicken soup 1 pint of sour cream 1 sleeve (package) of Ritz crackers 1 tbsp. Poppy Seeds Cut the chicken into even bite size pieces and cook them in water or chicken broth until they are done and the broth is absorbed. Combine the soup and sour cream and spoon over the chicken in a well greased baking dish. Crumble the Ritz crackers and incorporate with the poppy seeds and top. Bake @ 350 degrees for about 20 minutes until bubbly. Remember the chicken is done. Top with parsley and serve over rice or noodles and fruit on the side.
  3. Here's an easy one.. bottom of a 9 x 11 pan - 2 strips of bacon then 2 boxes of Uncle Ben's original long grain and wild rice.. put only one bag of seasoning on top of the rice and save the other one then layer cut up chicken breast on top of that top the chicken with Golden Mushroom soup add water carefully so that the rice will cook but you don't disturb the golden mushroom soup layered on the chicken on top of the whole thing, sprinkle the other packet of seasoning for the rice cover the whole thing with foil and cook at 375 for an hour. Yummy and easy
  4. Well what i usually do is make rigontini noodles, boil till soft. Cook chicken with Lemon peper and pepper/garlic salt in a frying pan till white in color. then add mushroom soup(amount depends on amount of other items) don't drown it but make sure it covers everything. Then put all in a big pot and let cook for 15 minutes and serve. Hope this helps.
  5. boneless charbroiled chicken diced up and served with broccoli, carrots, and pea pods, mushrooms and Alfredo sauce.with Garlic and basil added. Then mix it together over spinach noodles or rotini rainbow pasta. With just a pinch of salt and pepper. Grate some Parmesan cheese on top.
  6. My favorite chicken recipe is not exactly a casserole, but it is yummy! You need boneless chicken breasts, Armor dried beef (you'll find it where you find canned tuna), bacon (turkey or pork), cream of mushroom soup, sour cream. Hammer the chicken flat, put a little dried beef on top, roll each one up, and wrap a slice of bacon around each. Put the chicken rolls in a baking dish. Mix soup and sour cream (I use 2 cans soup and the equivalent of 1 can sour cream with 6 breasts), spoon over chicken. Cover with foil and bake at 350 for 30-45 minutes (sauce should be bubbling). Remove foil to brown last 5-10 minures. .
  7. I love to cook chicken. I guess the only thing that would be considered a casserole is my baked Alfredo. I will use bow tie pasta, frozen spinach, chicken breast and Alfredo sauce. Cook the pasta slightly and place on the bottom of the dish, layer the spinach on top of that. Cut your chicken into bite size pieces and brown them. Place your chicken on top of the pasta and spinach and pour Alfredo sauce on top. Bake until everything is hot. The amounts really depend on how many people you are cooking for and how big of eaters they are. I also like making Chicken and Rice. Here is the link for that recipe. http://www.recipezaar.com/241235
  8. I substitute chicken in this and my family LOVES IT! I made some modifications--okay, I layered it wrong....they still ate it all up though! http://allrecipes.com/Recipe/Thanksgiving-Leftover-Casserole/Detail.aspx My comments from this recipe (7 people found them helpful): This was awesome! I used all the leftover PREPARED stuffing I had, which was at least half a bag. I layered it wrong--stuffing first, turkey with sauce and then the potatoes with cheese sprinkled on top. It was divine! I read the review on the blandness, so before I added the flour I added 1/4 chopped onion, 2 cloves chopped garlic, and a chopped celery stalk. THEN added 2 more tablespoons of butter and the flour. It was SOO good! I will make this again! Thanks!
  9. i do 1 cup uncooked rice in a casserole dish, 2 cups water, 2 packets of dry lipton onion soup, 4 large chicken breasts, cover with aluminum foil and bake on 400 for 45 minutes i also replace the onion soup with 2 cans of campbells mushroom soup..... or broccoli cheese soup..... mmmmmmmmmm
  10. This one is really good. I've made it many times, and there is never anything left! 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free) 1 1/3 cups water 3/4 cup uncooked regular long-grain white rice 1/2 tsp. onion powder 1/4 tsp. ground black pepper 2 cups frozen mixed vegetables 4 skinless, boneless chicken breasts halves 1/2 cup shredded Cheddar cheese Directions: Stir the soup, water, rice, onion powder, black pepper and vegetables in an 11 x 8-inch (2-quart) shallow baking dish. Top with the chicken. Season the chicken as desired. Cover. Bake at 375°F. for 50 minutes or until the chicken is cooked through and the rice is tender. Top with cheese. Let casserole stand for 10 minutes. Stir rice before serving.
  11. It's called Chicken Perlow. You fry up 8 slices of bacon in a pot. Take out the bacon, drain, and crumble it up. Leave about 2 or 3 Tblsp of bacon grease in the pot. Fill with about two quarts of water. Add about two pounds of your favorite chicken, whether it be breasts, legs, thighs, etc., or boneless (safer). Add the crumbled bacon in with the chicken. Simmer the chicken in this water for about 45 min. I add some garlic, onions, salt and lots of pepper. Stir occasionally to make sure the water hasn't boiled away. Add some more water so there are at least 4 cups of water in the pot. (If you've used boneless chicken, you should add two boullion cubes). Let the water come to a boil again, and add 1 1/2 to 2 cups uncooked rice. Put the cover back on the pot, and simmer for 20 minutes. The one I love best is Swiss Chicken Take some boneless breasts--two large ones splitting each half in half (8 pieces), or 4 small ones, splitting in half (8 pieces). 8 slices of Swiss cheese, 1 can Campbell's Mushroom soup, 1/2 cup wine(or Sherry), and 1 box Stovetop Stuffing. Lay the breasts down in a baking pan.. Cover each piece with one slice Swiss Cheese. Mix Mushroom soup and wine together and pour over chicken. Sprinkle box of Stovetop dressing over chicken mixture. I cover w/ foil for 1/2 hour, then take foil off and bake for 20 to 30 minutes more at 350.
