I wanted to share a layered chicken casserole recipe with my daughter that I used to make years ago?????

and it was terrific! Here are some of the ingredients; chicken, diced. Corn tortillas, cut in strips, shredded cheese, and there was a soup that you mix your chicken in. Layer all of the above, with a few more ingredients, and bake. Is there anyone out there that remembers the rest?

  1. 2 lbs boneless chicken, cut in bite size pieces (mixture of white and dark) 1 tablespoon vegetable oil 1 small onion, chopped 1 clove garlic 1 (4 ounce) can green chilies 1 can cream of chicken soup 1 1/2 cups grated cheddar cheese 1 bag Frito corn chips or tortilla chips Saute chopped onion and garlic in oil. Add chicken pieces and brown. Add chilies and chicken soup. In a 13 X 9 X 2 baking pan layer 1/2 chicken mixture, 1/2 cheese, a layer of chips, 1/2 chicken mixture and ending with cheese. Bake at 350 til bubbly and cheese has melted

Here's and easy and delicious one Mexican chicken..... one 10 oz can cream of chicken one 10 oz can cheddar cheese soup one 10 oz can cream of mushroom one 10 oz can ro-tel 4 cups cooked chicken...(you can cook it yourself..or use a rotissiere from the store) one 11 ounce pkg flour tortillas 2 cups shredded cheddar cheese in a large bowl..stir the soups and the ro-tel together...stir in chicken...In a greased 13 x 9 inch pan..layer the tortillas and the chicken mixture....ending with tortillas...then coverthe top with cheese and bake at 350 for 30 minutes...enjoy!!!
