  1. hope this recipe works for you, if you try it. ingredients For Chicken Casserole: 65g Butter/margarine 1 finely chopped onion 125g sliced mushrooms 2 finely chopped celery sticks 400g tin of tomatoes 4 chicken joints 225g long grain brown or white rice 600mls stock 1 teaspoon of sugar 1 teaspoon mixed herbs Cooking Directions For Chicken Casserole: 1. Melt the butter in a pan and then brown the chicken pieces. Drain off the fat and place the chicken into a casserole dish. 2. Fry the onion, rice and celery for about 4 minutes then add the tomatoes, stock, sugar and the herbs. Bring to the boil whilst stirring. 3. Pour the mixture over the chicken, cover the casserole dish and cook at 400f, 200c or gas mark 6 for about an hour. 4. Heat the remaining butter and fry the mushrooms for 2 minutes before adding to the casserole.

Can chicken in water (98% fat free) 15 oz Can of low fat cream of chicken soup 15 oz Can of mixed veggies, drained 15 oz Can of whole kernel corn, drained 1/4 cup Fat-free may 1/8 tsp. In a separate small bowl, melt the butter. Crush crackers and stir into melted butter. Pour over casserole mixture. Bake at 350 degrees for 30 minutes or until bubbly. Optional; add 1/4 cup fat free cheddar cheese

Chicken and Rice Casserole 4 chicken breasts 1 cup long grain white rice 1 package onion soup mix 1 can cream of chicken soup 1 can water 1/2 lb sliced mushrooms (you can use canned mushrooms) salt and pepper Preheat oven to 350 degrees. Grease baking dish. Mix everything together EXCEPT chicken. Mix well and put into casserole dish. Put chicken on top of rice mixture. Cover and bake 1 hour. Uncover and bake 30 minutes.

Ingredients: 4-5 cups of cooked chicken breasts 1 cup mayonnaise 2 cans cream of chicken soup 1/2 tsp curry powder 2 (14 oz.) cans artichoke hearts (or 14 oz fresh artichokes) drained and sliced Garlic powder to taste 1 tbsp lemon sauce 1 1/2 cup shredded sharp cheese 1/4 cup seasoned croutons 2-4 tbsp butter Directions: Preheat oven too 350 degrees. Season artichoke hearts with garlic. Place in 9 x 12 inch greased casserole. Dice chicken and add on top of artichokes in casserole dish. In a separate bowl, mix soup, mayonnaise, lemon juice and curry and spread over chicken. Sprinkle with shredded cheese and topped with croutons. Bake 30 minutes or until heated through.
