looking for a chicken and apple recipe casserole?
Help. I seen a recipe for sliced apples and boneless chicken with sweet onions in layers and then a cheese sauce on top and baked. but cant find it and not sure what the sauce is made of anyone know thank you

- You can use grated Cheddar and Mozzarella cheese and some milk, and then just put over the chicken, apple plus sweet onions. Bake at 150 Celsius for about 90 minutes in a conventional oven. Keep checking from time to time, and towards the end of the cooking time, open the cover of the casserole to brown the top. Enjoy! {:-)
- CHICKEN CASSEROLE WITH APPLES AND CHEESE 5 tbsp. butter 3 med. red cooking apples, halved, cored and sliced 2 lg. onions, thinly sliced 6 boneless, skinned chicken breasts (3 whole) 1 tsp. salt 1/4 tsp. pepper 1 c. grated Swiss cheese 1/2 c. Parmesan cheese 1/4 c. unseasoned dry bread crumbs 1/2 tsp. thyme 2 tbsp. Brandy, Apple Jack or cider Preheat oven to 350 degrees. Grease baking dish with 1 tablespoon butter. Saute apples and onions in remaining butter until very tender, about 10 minutes. Do not brown. Spread mixture in bottom of baking dish. Rub breasts with salt and pepper. Arrange down middle of apple mixture, overlapping slightly. Combine cheese, bread crumbs and thyme. Sprinkle over chicken and apple mixture. Drizzle brandy over all. Bake until cheese is golden brown and chicken is tender, 35 minutes or more. Serves 6. Really good!
- Chicken and Apple Casserole Method: In a large frypan heat up 2/3 tablespoons of olive oil and gently fry of 2/3 rasher of bacon (cut into large chunks) and about 12 small pickling onions (no pickling onions, well, quarter some large onions). Remove from fry pan. Into same pan place chicken joints of choice, say about 6-8 chicken thighs or legs, or a whole chicken cut into 6-8 pieces. Sauté the chicken to colour and seal then remove from pan. Finally, add 2/3 carrot cut into chunks, 3-4 small turnips peeled and quartered and a clove of garlic. Sauté for about five minutes then add back the bacon and onion. Re-heat and then de-glaze with 300ml of dry cider (or use chicken stock, water , white wine or dry vermouth). Finally add two large sharp apples, peeled, cored and diced into large pieces, a bay leaf, and a large sprig of fresh thyme. Use a large-lidded oven casserole pot or dish. Place the chicken pieces in and pour over all the vegetables and liquid . Replace lid. If you don't have a good seal, mix up a flour and water paste and seal the edges - you want the contents to steam in their own juices. Cook in a 180°c oven for 1 - 1½ hours. Serve straight from the pot.
