Chook Me!

Something hearty but not too unhealthy...?

I completely can't think of anything for dinner!! In recent nights, we've had beef and vege stir fry; nachos; pizza; lamb salad; chicken, rice and vegies; Subway; and spaghetti. i totally can't think of anything that won't seem too much of a repeat of something else!! except casserole, but that takes too long. anyone have any ideas? i'd like something hearty but not too unhealthy... don't like seafood. like meat. only have carrots and broccoli for vegies. don't want takeout -- too expensive! help me please!!! getting soo hungry!!!!

  1. chicken cordon bleu 6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness 6 string cheese sticks 6 slices ham 1/2 cup butter, melted 1 cup seasoned dry bread crumbs toothpicks Preheat the oven to 350 degrees F (175 degrees C). Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish. Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear. serve with steamed brocolli and carrots
  2. Take the broccoli and maybe some onions (they are cheap) and chop them up and saute them in butter. While that is going on, whip up 3 eggs with a little milk or cream and dump them into a buttered skillet, wait a bit, then flip them over. Put some cheese and the sauteed veggies on one side of that big egg pancake, then fold it over in half. Voila! An omelette! Lots of protein and the right kind of fat to keep you going!

  4. okay what about a spaghetti casserole . prepare meat sauce . then cook spaghetti noodles and in the mean time take 8oz sour cream and 8oz cream cheese these both can be low fat or fat free and let them come to room temp and mix together . put spaghetti noodles into pan and layer with sauce and then sour cream and cream cheese mixture plop it on with tablespoon and keep layering . then at the top sprinkle mozzarella cheese and bake at 350 for about an 30-45 minutes . wallah you have an awesome dinner .
