how do you make easy chicken enchilada casserole?

i use to make a casserole that consisted of boiling chicken, shred it, cut up tortillas, green chile sauce, black olives, cheese, and i think it was cream chicken soup mix it all together and bake. but i don't remember if i am forgetting anything else.. anyone else ever made this??

  1. Mix some sour cream w/ the cream of chicken. KING RANCH CHICKEN CASSEROLE 1 large onion, chopped 1 large green bell pepper, chopped 2 tablespoons vegetable oil 2 cups chopped cooked chicken 1 (10 3/4-oz) can cream of chicken soup, undiluted 1 (10 3/4-oz) can cream of mushroom soup, undiluted 1 (10-oz) can diced tomato and green chiles 1 teaspoon chili powder 1/4 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon pepper 12 (6-inch) corn tortillas 2 cups (8 oz) shredded Cheddar cheese, divided Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat. Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice. Bake at 350° for 30 to 35 minutes. Note: Freeze casserole up to 1 month, if desired.   2. The first answerer's recipe sounds delicious. Might I add one variation that I do when I make mine..... rather than boiling my chicken I buy bone-in, skin-on chicken (thighs b/c I prefer dark meat)... season it with some olive oil, salt, pepper, garlic powder and cayenne... then I bake it in the over until done. Let it cool then shred it like you would in your recipe. I just like the flavor of the roasted chicken better than the boiled. :)
  3. Cook your chicken and shred. Mix 2 c. broth and 1 can cream of chicken soup. Add 1 T. cumin, 1 can diced green chilis, 1 sm. can sliced black olives and add your shredded chicken. Layer in 9 X 13 pan, some sauce, a layer of corn tortillas, some shredded cheese. Repeat til your sauce is gone. Cover with foil and bake 40 min. at 350. Uncover and brown chees if desired. You can make this with ground beef too, using tomato sauce and chili powder.
