  5. This is something i made up and my family loves it... I cube 2-3 chicken breast (its easier to do this if you have them just SLIGHTLY frozen or almost completely thawed but not all the way). Salt and Pepper and saute until cooked over med heat in a little oil (not a lot of oil just enough to brown your chicken until done). Set chicken aside. Then cook a bag of frozen Birds Eye Broccoli (the kind you cook in a bag in the microwave...easy-easy). Set it aside. Cook one box of Rice a Roni Rice Pilaf as directed. Just before it is nearly done...maybe the last 5 minutes at most add your cooked cubed chicken and cook broccoli to rice. Let simmer on very low heat for about 5 minutes or so. Then take about 1/2 cup of Shredded Parmesan Cheese (you can use the kind in the zip bag with all the other shredded cheese, but NOT the powder). Toss the cheese through the chicken & rice mixture just before serving. Of course my kids have to have a sprinkle of shredded cheddar once i put it on plate. Serve with crescent rolls and salad or any veggie your family will eat. If you find it is a bit dry add a dash of broth. Sometime i add cream chicken or mushroom soup but we prefer it much better w/o it....also in a pinch you can also use can chicken...but cubed is much better and worth the time. enjoy :)
  6. I also wanted to try the casserole recipe from Campbells. It was good enough, the family liked it, but I changed it up from the can recipe because it wasn't cheesy enough. I take 2 cans of cheddar cheese soup instead of chicken soup (mixed with milk) and slowly mix in the rice. I also add about a half cup of shredded cheddar cheese into the mixture and then spread it onto the casserole dish. It's pretty rich but the whole family loves it, I always have my kids begging me to make it for dinner (which is a nice change), and it's fairly quick to make and clean up.
  7. Here is a link to a different sort of recipe for a chicken casserole with crispy rice: http://www.ehow.com/how_2249815_chinese-chicken-casserole.html
