Could someone give me an easy and economic recipe for a chicken or beef casserole I can cook in a slow cooker.
not too many ingredients, and something foolproof as I'm not a fantastic cook.

- Try this recipe, hope this help... #1. ~Slow Cooked Chicken Casserole~ Ingredients: # 1 kg chicken pieces(I like chicken which is still on the bone) # 2 slices bacon, finely chopped # 1 cup mushrooms, sliced # 1 cup potatoes, diced # 1/2 cup chicken stock # 1/4 cup cream(sour cream can be used instead) # pepper # mixed herbs Directions: Brown chicken in frying pan then transfer to casserole dish. Fry bacon until crisp, add this to chicken. Lightly fry mushrooms until cooked(I add the pepper while the mushrooms are cooking), add to chicken. After mushrooms have been transferred from pan to casserole dish add diced potatoes to frying pan. Add mixed herbs to potatoes and fry until lightly golden. Add this to casserole dish. Pour chicken stock over mixture in casserole dish and then cooked in oven on low temperature for 2-3 hours. Half an hour before serving turn oven up to moderate to high heat and add cream to casserole dish. If desired add cornflour to cream to thicken sauce. This can be done in a slow cooker instead of oven. as a variation white wine can be used instead of stock. #2. ~Creamy Broccoli Chicken Recipe~ INGREDIENTS: * 1 can Cream of Broccoli Soup * boneless chicken breasts (as many as you need) - I buy the frozen ones with 6-7 in a bag - approx. 3 pounds * 1 bag frozen broccoli * salt and pepper * 1 cup milk PREPARATION: Place chicken in the crockpot. Cover with frozen veggies and cream of broccoli soup. Add salt and pepper to taste. Cook on LOW 6 to 8 hours or HIGH 3 to 4 hours. (Boneless chicken breasts might be dry if cooked too long.) Add milk about 45 minutes before done, or 30 minutes if cooking on high. Serve poured over rice!!! Yummy! Enjoy!! :)
- Really any standard casserole recipe can be cooked in the slow cooker, just reduce the water amount alittle. If you like curry here is great one. Takes 30 minutes to cook in a pot on the stove top, but could be cooked in a low cooker as well. Curry Chicken Casserole 800g diced chicken fillets or thigh fillets. 1 cup coconut milk, 1 sliced onion, 1 cup diced onion and 1/2 to 1 teaspoon green curry paste (herb or asian section in supermarket) Cook curry in alittle oil on stove top (30 seconds), then add onion. Add diced chicken, cook till tender. Put in coconut milk & pumkpin pieces and simmer gently for 30 minutes. The pumpkin thicken the casserole alittle. Serve with rice. Cooking is not difficult to do, just learning how to time things, good luck. Jarred chops (My Father-in laws recipe) 6-8 forequarter lamb chops, 3 tabspoons tomato sauce, 1 cup water, 1 tabspoon flour 1 tab brown vinegar, 1 teaspoon sugar and 1 teaspoon worcestshire sauce. Roll chops in flour and sugar mixture, place into casserole dish or slow cooker. Mix the liquid ingedients together & pour over chops. Cook in a moderate oven for 1.5 hours or a slow cooker till cooked. Serve with mashed potatoe and vegetables.
- I know you asked for chicken or beef casserole but maybe you can try my favorite casseroles that I personally enjoy. I've also included pictures (I'm obsessed with good foods i make). :D The first one is called San Antonio Squash Casserole 2 ounces butter, divided, plus more for pan 2 cups diced yellow onion 2 pounds sliced yellow squash 1 pound cubed American cheese 8 ounces canned diced green chiles 10 ounces cream of celery soup 3/4 cup bread crumbs Preheat oven to 350 degrees F. Melt half of the butter in a large skillet over medium heat. Add onion and saute until soft. In a separate skillet, saute the squash in the remaining butter until soft. Alternatively, you can cook the squash in the microwave. Drain excess liquid from squash. Butter a casserole dish and then combine the onion, squash, cheese, green chiles, and soup in the casserole dish. Bake until heated through and cheese is well melted. Remove from oven, stir, and sprinkle bread crumbs on top. Return to the oven and bake 5 more minutes, or until bread crumb mixture is golden. - For chicken,put chicken in slow cooker,if poss fry to brown off with an onion before putting in slow cooker,now you have your chicken and onion in slow cooker,add mushrooms salt,pepper,a little garlic if you like it of course,a chicken stock cube,now mix one pack on a tin of mushroom soup or a get a supermarket ownbrand pack of soup,and mix with little milk,add to chicken etc,now add little water,you can also add some potatoes cut small to chicken,then serve with a veg if you want.
