can anyone tell me any good recipes for my left over chicken for my tea tonight,somrthing easy like casserole.

  2. Stir fry with any veg you have in fridge,and maybe some noodles.
  3. Chop it into chunks and mix with cream of mushroom soup and a bit of sour cream and top it with some stove top (make the stuffing first) and bake until hot and bubbly.Serve with some veggies on the side.
  4. chicken chow mein, cut up some green pepper 1 onion and a few mushrooms, marinade in soy sauce for 20 mins, add a chicken stock cube, stir fry and then add some cooked noodles, very quick and healthy, and tasty

  6. Make a curry or mix it with a white sauce with a few fried onions and have it on a bed of rice. Mix with gravy and stick in under a pastry top.

Poppyseed Chicken Serves 4 2 cups (500 g) cooked chicken (white or dark meat) 13 oz (2 dl) sour cream 13 oz (2 dl) canned cream of chicken soup (1 can of condensed soup) 1 cup (250 g) Ritz cracker pieces (about 1 ``tube'' of crackers) 2 oz(50 g) butter 2 Tbsp (30 ml) poppy seeds Cut the chicken into bite-sized pieces, and put it on the bottom of a casserole dish big enough to hold it. Combine sour cream and condensed chicken soup in a pan, and pour it over the chicken in an even layer. In the same pan, (save dishes!) melt the butter, and add broken-up crackers and poppy seeds. Mix together and distribute over the chicken and sauce. Bake at about 325F or 160C for 20-30 minutes -- until the topping is brown, the sauce is bubbling, and the chicken is hot. Somehow this doesn't seem very nutritious. Serve it with lots of vegetables. Broccoli and carrots go well. Use more or less of the ingredients to taste, or depending on how many you are serving. Use different soups. Add mushrooms. Add other stuff. Have fun. RATING Difficulty: easy. Time: 40 minutes. Chicken Enchiladas Left over Chicken Shredded 1/2c. chunky salsa 1/2c. sour cream 1 can enchilada sauce Tortillas (flour, wheat,low carb. low fat...whatever you like) Pre heat oven to 350 degrees 1. Mix chicken, salsa, sour cream 2. Lay tortilla(s) out 3. Place 2 tablespoon or so of chicken mixture along edge of tortilla and roll up like a cigar. 4. Place your rolls (seam side down) into a 13x9 pan, pour enchilada sauce over. 5. Place foil on top of pan tightly and bake for 20 minutes, take foil off and bake until hot and bubbly (maybe 5-10 more minutes)
  9. Chop an onion and fry with garlic, chopped tomatoes, mushrooms and herbs & spices (smoked paprika, mustard seeds and thyme are my favourite combination). Add salt and pepper and the chicken and simmer for 20 mins. Add some passata (sieved tomatoes) or tomato puree if desired. Serve with rice, pasta or cous cous

Chicken Ritz Casserole Ingredients: 5-6 chicken breasts, cooked 1 can cream of chicken soup 1 can cheddar broccoli soup about 1/4 soup can of milk 1-1/2 c. sour cream 2 c. cooked minute rice (1 c. prior to cooking) dash salt and pepper 30 to 40 Ritz crackers, crumbled Butter Cooking Instructions: Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.
  11. Left over chicken im house almost always gets Thai curried. For a quick and easy version pick up a tub of thai curry paste, some coconut milk, a tin of bamboo shoots, a red or green pepper and some frozen peas. Open the coconut milk and put about 4 tablespoons of it in a large pan - a wok is excellent - try to use the thicker part if the milk if its not all shaken up. Add a generous dessert spoon of curry paste and stir this into the milk to make a looser paste over a low heat. Add your chicken in nice chopstick manageable pieces. Next add the sliced pepper and cook for a couple of minutes. Add the drained bamboo shoots and stir for another couple of minutes. Add the rest of the coconut milk and the peas. Cook until milk sauce is boiling. Serve with plain or jasmine rice. Of course you could get really into this and add fish sauces, thai basil leavs, other veggies or make your paste from scratch but this is a good, easy, supper dish. Takes me about twenty mintues start to finish.
  12. you can make some rice, once done, put in the bottom of casserole dish, add some cream of (what ever you want) a little water shred your chicken and mix all up should be moist enough not to burn or stick, but not too wet.....mix in some shredded cheese throw in preheated oven 350-400 when casserole is looking almost ready add cheese to to the top, and let melt...no your casserole is ready.
