looking for quick meal ideas or casserole dishes?

looking for casserole dishes. easy to prepare with main ingredients like chicken or beef and veggies. me and my boyfriend are on the go alot so im looking for things i can cook and refrigerate or freeze. i love tomatoes and mushrooms. im open to anything. i just get bored making lasagna which is my boyfriends favorite. i love tuna noodle casserole but my boyfriend hates it. help...

  1. have you tried to put chicken instead of tuna in your noodle cassarole? can buy chicken in can just like tuna.
  2. Mac n cheese is a good one - homemade especially - since you can use different cheeses and put meat into it. Make a homemade pot pie - which is really a stew in a crust. Start a roast in a crock pot. SOUP!!! soup is good food. I love soup. Good luck!

Stir Fry, Soups/stews are good in a crockpot, chili, quick pasta dishes (I love with shrimp and lots of garlic yum), Chicken breast cooks faster than bone-in chicken, thin sliced porkchops lightly floured with herbs, sauteed in butter (with a lemon butter sauce from the pan drippings (Can be used with pounded out chicken breasts too), You can always make foil pouches and have those ready to pop in the oven at a moments notice.

Chicken Spaghetti Casserole 2 cans Cream of Chicken Soup 1 can chicken broth ½ box spaghetti noodles ¾ stack saltine crackers ½ cup melted butter 12 slices Kraft cheese slices Salt and pepper 1 ½ lbs chicken breast 1. Cook spaghetti noodles, and boil chicken breasts. 2. Shred chicken breast 3. Spray 9” X 13” pan with Pam 4. Put cooked spaghetti noodles in bottom of pan 5. Place shredded chicken on top of noodles 6. Top with cheese slices 7. Pour Chicken soup and broth mixture on top of cheese. 8. Top with cracker/butter mixture (crumble ¾ stack saltines and mix in melted butter). 9. Bake at 350 for 30 min. or until bubbly My family loves this dish, especially my husband. Good luck!   6. lol i know exactly what you mean!! I have an "on the go" kind of job too and it's hard to eat healthy foods, so it's imperative to pack a lunch that is hearty enough to satisfy your hunger. One of the main things i like to do is make rice, potatoes (mashed or other), pasta, or beans as a side dish and buy a bunch of frozen vegetables as well. Then i make either chicken (i like to make it with some Italian seasoning, salt and pepper on it for flavor or even BBQ or teriyaki), steak or beef of some sort (bake it in the oven or grill it with BBQ, teriyaki or any other steak sauces or rubs that you like), or even pork chops. I like to use the Gladware (i guess any of these products would work, but the inexpensive ones are good in case you lose it so it won't be hard on the pocketbook) entree size containers. I put some meat in it, one of the side dishes and some frozen veggies in it and season it with salt or pepper or whatever else might be good, put the lid on it and take it with you. It won't go bad if it isn't refrigerated (a lot of people think that things go bad when they haven't been refrigerated for a few hours). When it's time to eat, microwave for a minute or so and enjoy! don't forget to bring a plastic fork with you! Good luck!

A casserole that I looooooooove: 1 lb ground beef 1 onion, chopped 4 garlic cloves, minced sliced fresh mushrooms, however many you want to add 2-3 cans cream of mushroom soup milk cooked rice OR noodles, whichever you prefer shredded cheddar cheese Cook the beef, onion, garlic, and mushrooms in oil until done. Mix all ingredients together, spread into a greased casserole dish, top with the shredded cheese and bake until warm and cheese is melted! P.S. - I have another variety of this casserole, only with chicken, broccoli, and cheese. Message me if you'd like it!
  8. Here is a casserole that my mom used to make on busy nights when I was little. I liked it so much as a kid that I asked her for the recipe when I started my own family. And it's so easy to make. Brown 1lb. of ground beef, drain fat, add one can of drained sweet corn, one can of cream of mushroom soup, and one can of cream of chicken soup, mix all together and remove from heat. While you are browning the ground beef you can start boiling one bag of egg noodles. After noodles are done you lightly grease a 2 qt. casserole dish and put in enough noodles to cover the bottom of the dish, then top the noodles with half of your hamburger mixture, then top the hamburger mixture with slices of american cheese, start the layer all over again starting with the noodles and sprinkle the top of your dish with some parmesaen cheese, bake at 350 degrees for about 30 mins. It's really good. You can make it ahead of time and put it in the refridgerator or freeze it and make it later on in the week. Hope you like!
  9. ********OLD FASHION GOULASH 1 lb. ground beef 1 can diced Rotel tomatoes with green chilies 1 can Ranch style beans Elbow macaroni (pre cook according to package) Brown ground beef; drain. Add all other ingredients. Simmer about 15 minutes. Top with grated Cheddar cheese. Its quick, easy and good.

Make batches of sheppards pie and freeze them Curry chicken with brocolli (then just cook rice when you get home) Tortellini in tomatoe sauce (add cheese on top before baking) I usually buy gr beef when it is on sale and brown all of it with onion soup mix, then freeze in batches. Use this versatile beef with: with slow cooker: spaghetti, lasagna, chili, beef barley soup. Sheppards pie, tacos... etc. If you have a slow cooker, utilize it, throw your gr beef in with sauce or whatever and when you get home, meals will be cooked... easy! I use mine every other day...

Season the beef, lamb and chicken with Essence, salt and pepper and add in batches to the pot, searing on all sides. Add the quartered onions, whole garlic, red pepper, and bay leaves, and enough water to cover. Bring to a boil. Reduce the heat and simmer uncovered, skimming to remove any scum that forms on the surface, until the meat is tender and the chicken is falling from the bones, about 2 hours. Strain, reserving the broth. When the meats and chicken are cool enough to handle, remove the skin and bones and discard. Chop the meat. Return the clean pot to the heat and cook the bacon over medium-high heat until the fat is rendered and crisp. Remove with a slotted spoon. To the fat in the pan, add the chopped onions, carrots and bell peppers, and cook stirring, until soft, 4 minutes. Add the chopped garlic, and cook, stirring, for 30 seconds. Add the tomatoes and cook, stirring, for 2 minutes. Add the potatoes, lima beans, Worcestershire and sugar, and enough reserved broth to cover. Bring to a boil. Reduce the heat and simmer, stirring often, until thick and the potatoes are tender, 30 minutes to 1 hour. Add the corn and cooked meat and chicken and simmer, stirring occasionally, for 20 to 30 minutes. Add the bacon and parsley and stir. Remove from the heat and serve hot with Cheesy Garlic Grits Casserole and hot biscuits Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast): 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried oregano 1 tablespoon dried thyme Combine all ingredients thoroughly. Yield: 2/3 cup Cheesy Garlic Grits Casserole: 6 tablespoons unsalted butter 3 3/4 cups water 1 teaspoon salt 1 cup old fashioned or quick cooking grits (not instant) 3/4 cup heavy cream 1 cup grated cheddar cheese 3 tablespoons mashed roasted garlic puree 2 large eggs, beaten 3/4 teaspoon paprika Preheat the oven to 350 degrees F.
