Easy meals to make? I only have a microwave and roaster oven?
I don't really want to make any noodly casseroles. And when I roast a chicken or roast or whatever in my roaster oven, I can't think of a side that I can make in the microwave. Mashed potatoes I need a stove for..... and I can't make any pasta dishes cause I can't boil pasta in the microwave...well maybe I could, but it prolly wouldnt turn out well. Any suggestions?

- Romano Chicken INGREDIENTS 4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness 1/4 pound Swiss cheese, sliced 1/4 pound ham, sliced thin 2 tablespoons grated Parmesan cheese 1 1/2 teaspoons paprika 1/2 teaspoon garlic salt 1/2 teaspoon dried tarragon 1/2 teaspoon dried basil leaves 1 tablespoon butter, melted 1/3 cup dry bread crumbs Place chicken breasts on a pan. Place Swiss cheese and ham slices on top and roll up, securing with toothpicks if necessary. In a small bowl combine the Parmesan cheese, paprika, garlic salt, tarragon, basil and bread crumbs. Mix together and dip rollups in mixture to coat. Drizzle with melted butter and cook on High in microwave for 4 minutes, or until chicken is cooked through and juices run clear.
- You can make fish in the microwave and then use the oven to roast veggies and potatoes. I used to make sole almandine in the microwave. You melt butter in a baking dish in the microwave, add slivered almonds and cook on high for 2 minutes. Salt and pepper your sole filets, coat them with the butter from the dish and arrange them tucking any thin ends under. Then cook for 5 minutes covered on high and let rest 2 minutes. They are very good.

- Make baked potatoes in the microwave (LOADED! Butter, sour cream, cheese, bacon bits) and top with some meat you roast in your roaster... add bbq sauce to it.
- You can buy instant mashed potatoes ( betty crockers are the best ) microwave up the water and add flakes. Uncle Ben's also has microwaveable rice packages in may varieties look also in the frozen food section. Budget Gourmet, Michaelina's and Stouffers all have a macaroni and cheese to microwave

ZESTY ITALIAN CHICKEN (MICROWAVE) Yield: 6 Servings 2 tb Margarine or butter 1/2 ts Dried sage, crushed 3 Whole chicken breasts (about -2 1/4 lbs), skinned, Boned and halved lengthwise 1 Green pepper, cut in thin -strips 1/3 c Sliced fresh mushrooms 15 oz Tomato sauce (1 can) 1 1/2 ts Dried oregano, crushed 1/2 ts Garlic powder 1/2 ts Lemon pepper 6 Thin slices Swiss cheese 6 Thin slices ham Hot cooked rice or spaghetti Combine the margarine or butter and sage in a 12 x 7 1/2 x 2-inch microwave-safe baking dish. Microcook, uncovered, on HIGH for 30 to 60 seconds. Rinse chicken and pat dry. Add to dish, turning once to coat well. Add green pepper and mushrooms. Cover with vented microwave-safe plastic wrap and cook on HIGH for 8 to 10 minutes or until chicken is tender and no longer pink, turning chicken over and rearranging once. Remove chicken and vegetables from dish with a slotted spoon. Stir tomato sauce, oregano, garlic powder and lemon pepper into the drippings in pan. - you could always do some canned vegis in the wave and add a bit of cheese to them to dress em up a bit like parmesan or beemster and gorgonzola for canned white asparagus or frenchcut green beans
- I make my breakfast in the micro. I use 3 eggs with a bit of milk , salt, paper. put in a bowl & cook 2 mins strir then for another min. They come out so nice & fluffy. Then put aron on a triple layer paper towel for 3 min or until you like it. & make toast.
- Small investment of a hot plate and small crockpot will help you emensely!!! I am the same way.. with gas prices being so high, and propane stove... I just turned the gas off to the stove and use all small countertop appliances. When you make a roast, put in some potatoes, carrots, celery with it, and onions. When it is done.. cut up the veggies to go with it. Also I have a rice cooker that is similar to a crock pot. I am going to try orzo in it soon I think. Mashed potatoes... back the potato until well done, so that when you take it out you can mash it .. adding butter, milk, etc and then you may have homemade mashed potatoes I think pasta can be done in the microwave you just have to keep checking it. Also you can roast some veggies like corn, beans, yams, garlic, give it a try.

We don't know the circumstances in which Kristy finds herself. I lived in a dorm while in college, and didn't have access to a stove, and hotplates weren't allowed. I found myself eating out a lot, and making pasta in the microwave (yes, it can be done). Don't judge someone who is asking for assistance!! Betty Crocker au gratin potatoes are good in the microwave. They have some amazing pastas mixed with veggies in my freezer section, try some, I think they freeze already cooked pastas, because they aren't gummy. alfredo sauce 1 cup whipping cream 1/2 cup butter 1 cup parmesan cheese noodles of your choice, cooked melt the butter in the microwave, add the cream, mix. Add the parmesan cheese, mix. If desired, you can add a pinch of garlic powder, mix. Pour over noodles, you may not need all the sauce. This is a very versatile recipe, and I've adjusted it many times to use what I have on hand. I've even substituted evaporated skim milk to cut calories, and it's still good!
