  2. Here's one that is really easy, but sounds and looks complicated. Serve it to company and they'll remember it. Make some mashed potatoes and put them aside. (Try using the little red ones.. it looks more interesting, even though they retain more water.. use a little cream instead of milk) Dice a few Roma tomatoes and a link of andouille sausage. Put these in a bowl with some drained capers and set aside. Put a few tilapia filets on a sheet pan / cookie sheet in a 350 degree oven. Shouldn't take more than 10-12 minutes if the filets aren't too thick. In a skillet, melt a pat of butter, then put in your tomato/sausage/caper mix. Cook a few minutes on high heat. Add a few splashes of white wine and a couple pinches of salt. This is your bordelaise. Shake the pan around and make some chef-like noises. (please don't say BAM though) When the tilapia is cooked, lean a filet up against a mound of the mashed potatoes and pour the bordelaise over it. Smile shyly and accept the praise. ps, you can cut the tomatoes and sausage ahead. put the capers in the mix and cover the bowl with plastic wrap. It'll keep in the fridge all day. the mashed potatoes can be made ahead and either nuked or warmed up in a hot skillet. If you do that ahead of time, you can make the main dish in the 10-15 minutes it takes for the tilapia to cook in the oven.
  3. Tuna Casserole 1/2 minced onion 2 cans condensed cream of mushroom soup 1/2 cup milk, 2% 2 cup cheddar cheese 450g small shell pasta 6 cup water 1/8 tsp pepper 2 cans fancy albacore tuna in spring water 1/2 cup potato chips, crushed 1 Cook shell pasta in water. Drain 2 In a medium sized sauce pan, combine soup and milk until smooth. Add tuna, onion and pepper. Bring to a boil. Add cheese and stir until melted. 3 Mix tuna sauce with the pasta. 4 Top with crushed potato chips. I used to love this when I was a kid. Enjoy! Tip: Fancy Albacore tuna in spring water doesn't taste fishy. If you use the chunk light tuna it will definitely taste very fishy.
  4. Italian sausages with sauteed onions (and/or green peppers) with rice pilaf or red beans and rice. Fry Italian sausages with slivered onions in a little olive oil until the onions are lightly browned and the sausages are brown. It is especially good with red beans and rice. Look at Foodnetwork.com and view recipes for Sandra Lee's Semi-Homemade and Rachel Ray's 30 Minute Meals.
  5. Easy Sun-Dried Tomato Pasta Alfredo I love to cook, but on nights I need to take it easy this is one of my favorites. The veggies you use don't matter, anything you have on hand will work: One box (16 oz) tri-colored rotini pasta One jar Classico Sun Dried Tomato Alfredo 1/2 sweet onion, diced 1-2 cloves garlic, minced 1 pkg smoked sausage (the horseshoe shaped one), sliced 1 can quartered artichoke hearts, drained 1 small can spinach, drained 1 large, or 2 small zucchini, sliced and quartered (fresh asparagus is good, too) Parmesan cheese Using a couple of tbsp olive oil or butter, heat it in a large skillet and add onion and garlic until tender. Add the sausage and brown. Add the other veggies and sautee until tender. Add sauce and mix. Cook and drain pasta in a large pot or dutch oven. Add sauce and veggies, sprinke on parmesan cheese, and serve with garlic bread. It's an easy hit every time!
  6. Forked Tacos....brown & drain 1 pound ground beef. stir in 1 package taco seasoming mix with 1 six ounce can of tomato paste and 12 ounces of water and 1 can about 14 ounces drained kidney beans. cover and simmer about 20 minutes. serve ontop of Frito chips and garnish with shredded cheese, lettuce, tomato, sour cream or whatever you prefer. I learned to make this in girl scout during the 60's.
