Help me cook!?

Im trying the cambells cheesy chicken rice casserole. I want to substitute but im no kind of experienced cook so I wanted to ask if this would work. Since its a casserole I assume it really doesnt matter how much I actually put in it. I wanted to double the soup, use chicken broth instead of water, and use canned vegitables intead of frozen. I also dont have onion powder but I have onion soup mix. Should I use the soup mix or just leave it out. and Im just worried that maybe the vegitables will be gross if I cook them for 50 min bc its intended for frozen? or will they be fine? Also I have a 9x13 dish and not an 8x11 like it calls for, but since im making more I assume it should be fine? Any advice or suggestions would be great.   1. It actually does matter how much you put in!! Yes, you can use chicken broth instead of water and the canned vegetables, doesn't really matter but drain it first, you cannot double the soup or you will have a runny soup like consistency to the casserole, onion soup mix will be alright but don't use the entire packet.
  2. I'm gonna be straight up with you: I have tried this recipe 3 times, following recipe exactly, and have NEVER had it come out right. Either too soupy, or takes 3x as long as the recipe says to cook, or rice not done. And I am an accomplished cook who rarely uses canned soups and mixes. I would suggest you look for another recipe to try instead of this particular one. But, to answer your questions: ~You can double the soup only if you double all other ingredients. ~You can sub chicken broth for water; it may make the dish too salty, so dont' add any extra. Esp. if you try to add some onion soup mix to it. ~I'd suggest you NOT add onion soup mix, and just fish in there and get out a Tbsp. or so of dry onions and leave the brown flavoring behind. If you don't' want to do that, leave it out. ~Using canned veggies: you can, but again, this adds much more salt than frozen veg. Drain first. ~A 9x13 will be fine instead of an 8x8 as long as you double all recipe ingredients. Grease sides well.
  3. Skip the onion mix...otherwise, it'll be too salty. got any garlic powder? I don't understand why you want to double the soup...doesn't seem necessary -- could make everything too soggy. Veggies should be fine -- maybe start cooking the rest of the dish, then add them in about 1/2way thru...just use your eyes and nose AS it's cooking. If it looks or smells funny, adjust it then. Rule of thumb for ya: Can always ADD salt, taking it out is harder. If it's too late and you already added too much salt, add in a potato to soak it up. You'll be fine!
