Are Roosters just as good to eat as hens?

I heard rooster are tough & don't have as much meat as hens. Is this true?

  1. It depends on when you butcher them. Roosters can be tough if they are old. That's why the French developed a recipe for Coq de Vin which was to be made with an old rooster and wine. If butchered young the males are every bit as good as the females. Old hens are tough as well. That's what most of the chicken meat in things like Campbells chicken and noodle soup comes from, old layers that no longer lay enough eggs.
