What are some good side dishes with a Chicken and Wild Rice casserole?

The casserole has rice, chicken, sausage, and cream of chicken soup and a few other things. I was going to make this casserole with two sides for some friends. It has a lot of flavor. Do you think a casserole is okay for a small dinner party? One of my friends does not like most vegetables so it can be tricky with sides.

  1. Potatoes au gratin would probably go with that, or a brocolli casserole made with cheese soup and ritz cracker crumbs, or some garlic bread, or some bruschetta. Wow, I'm hungry now.

  3. I think that would be great for a dinner party. Some sides are steamed broccoli or how about corn? You can also make a big salad with lots of veggies, or maybe since your friend is picky make a simple salad and have extra stuff (like croutons, carrots, cucumbers, onions, tomatos, cheese, nuts, ect...) in little bowls so people can decide what they do and don't want.

  5. How about a nice green salad, a fruit salad, you can saute some carrots and onions, or maybe roast them in the oven, or add them to the casserole. You can add some corn to the casserole. My family is very picking about vegetables too. But I use the above ideas and it gets them to eat some vegetables. Hope this gives you some ideas.

Marinated Carrots 5 cups sliced carrots (about 1 lb) 1 can (10 oz) tomato soup 2/3 cup sugar 3/4 cup vinegar 1/2 cup oil 1 tablespoon mustard 1 teaspoon pepper 1 teaspoon salt 1 small green pepper, chopped 1 medium onion, chopped 1-2 stalks celery, chopped 1 teaspoon Worcestershire Optional: 1 cup broccoli flowerets 1 cup cut cauliflower Cook carrots in small amount of boiling water until tender crisp, drain and cool; place in large bowl. Add broccoli and cauliflower if including. Combine tomato soup, sugar, vinegar, oil, mustard, pepper, salt, green pepper, onion, celery, Worcestershire. Pour over carrots; mix thoroughly. Refrigerate for a couple of hours.
