Chook Me!

Do you have a recipe for chicken wings on the grill?

I am participating in a chicken wing cook off, but have never even cooked a burger on the grill much less chicken wings. How do I do this? Its just for fun. If you have a great recipe that would be nice too.

  1. Baste them with a mix of melted butter and Frank's hot sauce--use equal amounts of each. They will be pretty spicy!
  2. Smoked Hot Chicken Wings 5 lbs. chicken wings. 1 cup Franks Original Redhot Sauce or other hot sauce 2/3 Cup melted Butter 2 Tbsp garlic powder 1 Tbsp cumin 1 Tbsp dried smoked Jalapeno peppers 1 LB fruit wood chips Clean wings, cut if needed. Boil chicken wings for 15 minutes to precook. Smoke chicken wings about 1.5 hour or until crispy. Mix remaining ingredients in large bowl. Put wings from smoker into bowl. Stir to cover wings evenly. Grill Chicken Wing Chile 3 chipotle peppers, stems removed 2 dried red New Mexican chiles 1 medium onion chopped 2 tablespoons vegetable oil 2 cloves garlic minced 3 piquin chiles, crushed 3/4 cup ketchup 3 tablespoons vinegar 2 tablespoons brown sugar 1 teaspoon dry mustard 1 teaspoon Worcestershire sauce 2 cups water 2 pounds chicken wings Cover dried chiles with hot water and let sit for 15 minutes. Drain. Saute the onion in oil until soft. Add garlic, cook for another 3 minutes. Add remaining ingredients except for the chicken wings, bring to a boil, reduce heat, and simmer for 20 minutes. Remove from heat, and puree in a blender until smooth. Cook over a slow fire, turning frequently, until done, about 30 minutes. Baste liberally with the sauce during the last 15 minutes of cooking.
  3. As a caterer who has grilled alot of things if I were to participate in a chicken wing cook off I'd blanch the wings in boiling water. In other words briefly dip them in boiling water then allow them to cool before grilling. This helps to get rid of excess fat which will drip on the heat source and make black smoke. Grill the wings till almost done then dip in sauce for the final five minutes of cooking. try to think of an unusual but still interesting and accessible sauce. There'll be tons of Buffalo wing variations so something different will stand out. Google some different cuisines or ideas that appeal to you. Here are some ideas Thai, Italian Lemon, BBQ, Chinese, in other words almost any region or BBQ that appeals to you. Fun toppings and/or sauces plus your presentation will greatly add to the appeal . Such as mango salsa with Thai chili wings??? Good Luck! and have fun !!!
  4. Try this Detroit Hot Honey Wings INGREDIENTS * 2 pounds chicken wings, tips discarded * 1 teaspoon cayenne pepper (add more if you can stand it)* * salt and ground black pepper to taste * 1 cup honey * 1/2 cup butter, melted * 1/2 cup hot sauce DIRECTIONS 1. Preheat an outdoor grill for medium heat and lightly oil grate. 2. Wash the wings well and pat dry with paper towel. Season the meat with cayenne, salt, and pepper. 3. Cook the chicken wings on preheated grill until cooked through and juices run clear, 20 to 30 minutes depending on the size of the wings. Brush the wings liberally using 1/2 cup of honey while they are cooking. 4. Melt the butter, pour into a large bowl and mix in the remaining 1/2 cup of honey and hot sauce. Remove the wings from the grill and immediately toss them in the hot honey butter sauce to coat. Serve the wings 'wet' or return them to the grill for 1 minute per side to set the sauce.
  5. Yummmy! My favorite. I like skinless grilled chicken wings. I take the skin off. Then I make a dry rub up of thyme, Italian seasoning, garlic powder salt and pepper. I dry rub them then place on a grill. I perfer charcoal. Then I have a sauce on the side I put on top while they are almost done cooking so it can soak in with the dry rub flavor. You can make a BBQ sauce or a hot and tangy sauce. Dont forget honey works great in most sauces!
