When making buffalo chicken wings, should I remove the skin before frying?

- depends on if you like the skin or not. I would remove it coz it would absorb the oil and be a fatty food.

- no. the skin is the best part and will hold the keep the chicken moist while cooking. You can always remove it it you don't like it latter.
- The skin is what gives real buffalo wings the crispy texture when you fry since there is no breading. Be careful not to overcook if you remove the skin - there isn't much meat on the wing and you'll be left with a mouthful of sawdust if you're not careful. If you're looking to be healthy remove the skin, marinate and then bake. Baste with your sauce while cooking - 350 degrees for 10-15 minutes should be good. If you are concerned about bacteria boil the marinade before you baste.
