When making buffalo chicken wings, should I remove the skin before frying?

  1. depends on if you like the skin or not. I would remove it coz it would absorb the oil and be a fatty food.

  3. no. the skin is the best part and will hold the keep the chicken moist while cooking. You can always remove it it you don't like it latter.
  4. The skin is what gives real buffalo wings the crispy texture when you fry since there is no breading. Be careful not to overcook if you remove the skin - there isn't much meat on the wing and you'll be left with a mouthful of sawdust if you're not careful. If you're looking to be healthy remove the skin, marinate and then bake. Baste with your sauce while cooking - 350 degrees for 10-15 minutes should be good. If you are concerned about bacteria boil the marinade before you baste.
