1. Use cooking wine, cheap wine you can find anywhere it doesn't matter but usually if you got one you're going to serve at the table just use it. It's the rule for any dish with a wine base sauce.Of course keep enough for you and your guest(s)
2. Ok first of all I'm sorry for saying this but thats terrible advice. Cooking wine is around but the rule of thumb is if you like to drink it or you like the aroma you'll enjoy cooking with it. The alcohol disappears and all is left s flavor so cooking wine brings practically nothing to the party. Ask some of your friends who drink with similar tastes whab red wines they enjoy and you'll be on a better track. If you want a cheap wine then just find a cheap red wine that your friends can agree upon. That way you save your wallet and maximize your flavor.
