- Take your wings and rinse them in cold water, then drop them in a large zip lock baggie. In a large bowl mix a whole bottle of your favorite Wing sauce and anywhere from 1/4 to 1/2 cup of Texas Pete. take this and pour it over the wings in the baggie. Push as much air as you can out of the bag and seal it. Fold it over and lay it in the fridge for a minimum of 3 hours to overnight. start the grill. If with charcoal, let it burn for at least 15 to 20 minutes after the fire dies down from the starter. Put the wings on the grill rack around the outside of the charcoal. Close the lid and leave them alone for about 6 to 8 minutes, turn them over and repeat. If they are not chared slightly, leave them another 2 to 3 minutes per side If it is a gas grill, same as above, but set the grill on medium to medium low. It may take a few more minutes with the gas, but just keep an eye on them. Leave the lid shut unless you are ready to turn them. Good luck. I have gotten very good results. If you lik ethem hotter, just add a little more Texas Pete.
- Main thing to remember when cooking on a grill is not to add the sauce until the end of the cooking process. You can add a dry rubb before hand of the following. tbs chili powder tbs garlic powder 1tsp of pepper 1tsp of salt 1 tsp of paprika 1tsp of dryed mustard This is for 12 buffalo wings. Rub it right in to the wings. Then place on a hot grill on the middle rack. The lower rack will be to hot. The sauce you can make it hot and sticky. Sauce 2tbs of Molasses 2tbs Brown Sugar 3/4 C ketchup 2tbs of Hot sauce 1tsp of dryed mustard 1 tbs of butter 1tbs of lemon juice 1tsp of chili powder Place in a saucepan on low heat and heat through. At the end of cooking of the wings brush on and heat on grill for 5 mins. Then at the very end place one more coat of the sauce and remove from grill.
- The secret is to use low heat. Low and slow. Always remember that. Anything higher than low for chicken, and you'll end up with burned chicken. Especially with wings. And as somebody already answered, do not apply the sauce until the final 5 - 10 minutes of grilling, and monitor them carefully after applying the sauce. The reason for this is a good sauce will contain butter and this will cause your wings to burn if left over heat too long. So apply the sauce last, and then after you remove the wings from the grill, add some more sauce to them and cover them with foil and leave covered for 10 - 15 minutes before serving. As far as the sauce goes, you can buy wing sauce from the grocery store, or you can make your own buffalo sauce by simply mixing red hot and butter.
