Does anybody have any secrets to making good Chicken Hot Wings?

I've made them before, but it was a couple of years ago.

  1. Personally, I fry the wing sections the dip them in sauce. I dip the raw sections in egg, then roll them in flour seasoned with Chachere's, then fry them. Drain on paper towels until all are fried, then melt a stick of butter (not margerine) in a saucepan. Pour in a bottle of your favorite hot sauce (we use Tobasco or Hot Sauce From Hell). Stir it well, then using tongs, dip the wings in it until they're coated. I never have leftovers!
  2. Sometimes we fry the wings or broil them (to try and make it more healthy) then we put it in the slow cooker with our fav hot sauce. The hot sauce is usually simmered with butter and extra chili are added in until it's reduced until half then put into the slow cooker. The longer it's in the slow cooker the spicier it gets.   3. If you want them battered first then batter them in egg and buttermilk and then roll them in flour and fry them only till golden brown, not all the way done. Take them out and pat them dry again and bake the rest of the way in the oven on 250 for about a hour 1/2 while brushing on your favorite hot sauce every 10-15 minutes. This allows the sauce to soak into the batter and then to harden a bit each time. If you don't want them battered, just put them on a baking sheet dry and then brush on the hot sauce but cook them on same temp. only for 2 1/2 hours still brushing them every 15-20 min. This is also really good with honey, bbq, or teriyaki sauce.
