I am cooking beer can chicken in my electric smoker, what temp. do I set it at?
It is a smoker/ roaster made by Rival. The bird is 4.5 lbs. What temperature and how long should it take to cook?

- I don't have experience with electric smokers, but I do beer can chicken all the time on my propane grill. I keep the temperature between 350-400 (indirect heat) for 1-1/2 hours. I also stick a wedge of onion in the neck opening to help keep the steam from escaping. It's not an air tight seal, but I think it intensifies flavor and moisture (crispy skin and moist meat ... yum!).

- Wow, tough crowd today. I use a Keg Roaster for my beer can chicken and turkey. If you are using wood to smoke with, this is my method: In the can I use 1/2 beer and 1/2 apple juice, you can experiment with other kinds of juice, I have also used orange, lemon, lime, cherry and even pear juice. My prefered wood is mesquite although I have used oak and hickory as well. for your size bird I would smoke at 225-250 for about 3 hours. Use a thermometer to ensure the chicken is done, take the chicken out at 165 degrees and let it set for 15 mins. it will continue to cook until the safe temp for chicken.
