i am making my family chicken wings tonight and i nedd a good food to serve with it? I want something that is very good and kind of healthy , i am in a cooking mood and would like to try something kind of difficult. Any suggestions?

BROCCOLI SALAD INGREDIENTS 1 head broccoli 6 to 8 slices cooked bacon, crumbled 1/2 cup chopped red onion 1/2 cup raisins, optional 8 ounces sharp Cheddar, cut into very small chunks 1 cup mayonnaise 2 tablespoons white vinegar 1/4 cup sugar 1/2 cup halved cherry tomatoes Salt and freshly ground black pepper DIRECTIONS Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, onion, raisins if using, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently. GREEN BEAN CASEROLE INGREDIENTS 1 can green beans 1 sm. can french fried onions 1/4 cup milk 1 1/2 cups grated sharp cheddar cheese 1 can cream of mushroom soup salt and pepper to taste DIRECTIONS Preheat oven to 375 degrees. Mix together milk, green beans, salt and pepper, soup, half the onions, and half the cheese, all in a casserole dish. Top the mix with the remainder onions and cheese, cover, and bake for about 35 minutes or until top cheese is melted. ITALIAN POTATOES INGREDIENTS 14 or 15 large red potatoes (about 5 pounds) Salt and pepper 1/2 cup chopped fresh parsley leaves 1/2 cup chopped green onions 3 large cloves garlic, thinly sliced 1 heaping teaspoon salt 1/2 teaspoon dry mustard 1 scant tablespoon sugar 1 tablespoon Worcestershire sauce 1 cup olive oil 1/2 cup tarragon vinegar DIRECTIONS Place potatoes in a large pot and cover with water. Bring to a boil, generously salt the water, and boil the potatoes until tender, approximately 30 to 40 minutes. Drain and let stand until cool enough to handle. Peel potatoes, if desired, and cut into 1-inch chunks. Place cut potatoes in a large bowl. Sprinkle parsley and green onions over potatoes. Make the sauce by mixing the rest of the ingredients together in another bowl; then pour sauce over the potatoes. Stir well. Let stand all day, or at least for 4 hours, stirring every hour. Do not refrigerate. Serve at room temperature. TWICE BAKED POTATO’S INGREDIENTS 4 baking potatoes (Idaho) 4 slices turkey bacon, chopped and cooked until crisp 1 cup light sour cream 1/2 cup shredded Cheddar, plus more for garnish Salt and freshly ground black pepper 2 tablespoons chopped fresh chives, as optional garnish DIRECTIONS Preheat oven to 400 degrees F. Bake potatoes for 1 hour, until tender. When cool enough to handle, cut each potato in half lengthwise, scoop out flesh, leaving a 1/4-inch shell and transfer flesh to a large bowl. Add bacon, sour cream and Cheddar and mix until blended. Season, to taste, with salt and black pepper. Spoon mixture back into the shells and discard any remaining shells. Sprinkle with a little more shredded Cheddar. Arrange stuffed shells on a baking sheet (or refrigerate until ready to bake). Bake 20 minutes, until golden brown. If desired, top with chives before serving.

- Chicken salad a la mode. Last time I even attempted this it blew up in my face.

- I think potato skins would go well with chicken wings. POTATO SKINS WITH CHEESE AND BACON 8 baking potatoes 2 lbs. bacon 1 lb. Cheddar cheese (shredded) Bake potatoes until done. Cut in half and clean out majority of potato leaving skin and about 1/8 inch of potato. Fry bacon until crisp then crumble; set aside. Fry potato skins in bacon grease until crisp (turn them one to two times). Drain skins on paper towels. Fill skins with cheese. Top with bacon. These toppings can be varied - olives, tomatoes, salsa, chicken, ground beef, various cheeses. Broil until cheese is melted. Top with sour cream and chives. If you want a healthier variation.... try using part-skim milk Mozarella cheese instead of cheddar cheese and use broccoli cut up into little bits instead of bacon.
