What is your favorite crockpot recipe? (Preferably with pork or chicken)?
I'm trying to cut back on red meat.... Thank you. All I can say is - there are some really good cooks in the Y/A community!

- Country Pork Chops and Gravy 1/2 cup all purpose flour 1 1/2 teaspoon dry mustard 1/2 teaspoon salt 1/2 teaspoon garlic powder 6 1 inch thick, lean boneless pork chops 1 10 3/4 ounce can condensed chicken broth 2 tablespoons vegetable oil Combine flour, dry mustard, salt and garlic powder in a shallow dish. Dredge chops in flour mixture and set aside. Combine remaining flour mixture with the chicken broth and pour into crockpot. Pour oil into a large skillet and place over medium high heat. Cook the chops in hot oil just until browned on both sides and then place in crockpot. Cook, covered on high for about 3 to 5 hours or until tender. Season with salt and pepper to taste. Serve with hot rice or mashed potatoes. If the gravy becomes too thick just add a little water. If gravy is too thin, add a little flour Yes you can use diet pepsi if that is what you use also. this one's delicious. I get asked to make it a lot. Pepsi Pork Roast 3 pound boneless pork roast 1/2 package dry onion soup mix 1 10 1/2 ounce can cream of mushroom soup 1 can Pepsi Mix dry soup mix with canned soup. Slowly pour Pepsi over and stir in. It will foam up and go down. Put roast in crockpot amd pour soup mixture over it. Cook on low for 8 to 10 hours. Remove roast and thicken juices before serving. Tastes great the next day as hot pork sandwiches with gravy too.
- Into your crock pot place chicken pieces along with onion , carrot, mushrooms and peppers. Add some stock and a splash of cider. You can add chunks of potato or sweet potato.Cook and add at the end some chopped spring onions for colour. You can thicken it at the end with some cornflour(corn starch) if needed.I like to brown the meat first to give a nicer flavour and appearance .

- This is absolutely my favorite chicken recipe, and it's SOOOOO EASY!!!! Take one chicken, I prefer an Oven Stuffer Roaster, and rinse inside and out and pat dry. Slice two carrots into 1/2 inch disks and roughly chop up one onion. Put into crock pot. Add 1 cup of water and 1 cup of white wine. Season the inside of the chicken with salt and pepper. Rub the outside with olive oil. Sprinkle the chicken back with All-Purpose Greek Seasoning. (I use "Cavender's. You can find it in most grocery stores -- yellow colored round container.). Put chicken in crock pot. Sprinkle breast and front (wings, legs, etc.) with the greek seasoning. Cover and cook according to crock pot instructions (4 hrs on High or 8 hrs on Low). When the chicken's done, remove from crock pot, strain the veggies from the juices and put juices into saucepan. Make a slurry of flour and cold water (or corn starch and cold water). Put the saucepan over high heat and whisk the slurry into the juices. It will thicken when it comes to a boil. Remove from the heat and season with salt and pepper. It's the BEST gravy! Hope this helps. Dave
