How Do You Make Chicken Ole Casserole?

I recently saw an episode of the 1980's sitcom "Mama's Family" in which one of the character's made Chicken Ole Casserole. I was not familiar with this dish before and I'd like to take a crack at making it. Is anyone familiar with ow to make this dish? It sounds good!. Also, can you please provide background on it, where does it originate from? Thank you very much!

  1. 12 boneless, skinless chicken tenders 2 cups water 1 can (15 ounces) mild chili beans, undrained 1 cup salsa 1/2 cup chopped green bell pepper 2 cups UNCLE BEN'S® Instant Rice 2 cups (8 ounces) shredded Mexican cheese blend, divided 2 cups bite-size tortilla chips 1. Spray large skillet with nonstick cooking spray. Add chicken; cook over medium-high heat 12 to 15 minutes or until lightly browned on both sides and chicken is no longer pink in center. 2. Add water, beans with liquid, salsa and bell pepper. Bring to a boil; add rice and 1 cup cheese. Cover; remove from heat and let stand 5 minutes or until liquid is absorbed. Top with tortilla chips and remaining 1 cup cheese; let stand, covered, 3 to 5 minutes or until cheese is melted.

CHICKEN BREASTS OLE' 3 Whole chicken breasts -- boneless & split 4 ounces Green chilies -- diced 3/4 cup Cheddar cheese -- shredded 3/4 cup Monterey Jack cheese -- shredded 3 tablespoons Onion -- finely chopped 1/3 cup Butter -- melted 1/4 teaspoon Chili powder 1/4 teaspoon Cumin -- ground 1 cup Tortilla chips -- crushed Wooden toothpicks Remove skin from chicken. Between sheets of waxed paper, pound each until 1/4" thick. Drain chilies and combine with the cheeses and onion. Divide into 6 equal portions. Sprinkle one portion down center of each breast. Roll chicken around filling, folding in ends and securing with wooden toothpicks. Combine the butter, chili powder and cumin. Coat rolls with butter mixture and roll in chips. Arrange chicken, seam side down, in a shallow greased casserole. Bake at 375 degrees for 45 minutes. Serve with sour cream and taco sauce. Goes great with Mexican rice.

Chicken Ole’ Casserole 1 can FF refried beans 1 jar Taco Bell salsa (or salsa of choice) 1 pkg Pre-cooked chicken strips (4 servings) 1 can of reduced fat cream of chicken soup ½ c FF or light sour cream 2 small can of diced green chilis 1 small can sliced black olives 1c FF shredded cheese (I mix mozzarella and cheddar) ½ bag of light tortilla chips crushed ¼ c chopped cilantro Preheat oven to 350 degrees. In an 11x13 glass baking dish, start by layering the refried beans in the bottom of the dish. Top with half of the salsa, followed by the chips, then the chicken. In a medium sized bowl, mix together the soup, sour cream, and chilies. Top this mixture on top of the chicken, followed by the cilantro, the cheese, the remaining salsa, and the olives. Bake for 45 minutes to an hour. Let stand for a few minutes before serving. 6 servings= 336 cals, 29g protein, 39g carbs 8 servings= 252 cals, 22g protein, 29g carbs NOTE: If you like it spicy, add jalapenos to it or use a spicy salsa. This is even better the next day and would make a great lunch at 8 servings!! Very easy to take to work and reheat also!!
  4. i have never tried it before so i'm not sure how it would taste 10 corn tortillas, sliced into strips 1/2-1 lb boneless skinless chicken breasts, cooked and shredded 2 (10 3/4 ounce) cans cream of chicken soup 1 cup milk 1 onion, chopped 2 garlic cloves, minced 1 (7 ounce) can chopped green chilies, drained 1 (7 ounce) jar salsa (homemade or commercial and you determine how hot) 2 cups shredded cheddar cheese Casseroles Main Dish Chicken Main Dish Spray a 13x9 inch baking dish with nonstick cooking spray. Layer with half the tortilla strips and half the chicken; set aside. In a bowl, mix together the soup, milk, onion, garlic, chiles, and salsa; mix well. Spread over the chicken. Layer with remaining tortilla strips and chicken. Sprinkle with cheese. Bake in a 300° oven for 1 1/2 hours.
  5. 2 chickens, boiled or baked, deboned 1 bag Dorito chips 3 cans mushroom soup 1 can Ro-Tel Line bottom of large baking dish with Dorito chips. Lay chicken on top of Dorito chips. Mix mushroom soup, Ro-Tel and run through blender, chicken broth and pour over chicken. Crumble Dorito chips on top and sprinkle with grated cheese. Bake about 30 to 40 minutes at 350 degrees until slightly browned.2
