Leftover Chicken Recipes?
I made a whole chicken in the oven the other day. Its already deboned and everything but we had quite a bit leftover...whats a good hearty meal thats good during colder weather that I can make out of this? I was thinking of either some sort of soup, warm sandwiches, or a casserole. Any good recipes. I dont want anything too strange or hard to make, im thinking something like chicken & dumplings, chicken noodle soup, chicken wild rice casserole, or warm cheesy chicken sandwiches. Something simple. Any ideas besides what I have, or great recipes?

- Chicken and Stuffing Casserole 4 cups cooked chicken, chopped 1 can cream of chicken soup ¾ cup chicken broth 1 package Stove Top Stuffing 1 stick butter, melted Preheat oven to 350 degrees. In saucepan mix chicken, soup and broth, heat over low heat until heated through, stirring frequently. Toss stuffing mix with melted butter and place 1/2 of this mix in bottom of greased 9 x 13" baking dish. Pour 1/2 of chicken mix on top of stuffing mix. Repeat. Bake 20 minutes or until bubbly. Chicken Pot Pie 3 - 4 cup cooked chicken, cubed 1 can mixed vegetables, drained 1 can cream of chicken soup ¼ teaspoon poultry seasoning salt and pepper 2 unbaked pie crust - 9 inch Combine first 5 ingredients in large bowl. Pour into prepared pie shell. Top with remaining pie crust, seal edges with water and flute. Cut steam slits in top, brush with milk. Bake at 350 degrees for 45 minutes, or until golden brown. Let sit for at least 10 minutes before serving. Chicken Spaghetti 1 cup onion, chopped fine 1 cup celery, chopped fine 2 tablespoons butter 3 - 4 cups cooked chicken, cubed 1 can cream of mushroom soup 1 can cream of chicken soup 1 pound Velveeta Cheese, cubed 1 jar pimentos, drained salt and pepper 12 ounces spaghetti, cooked and drained In large skillet over medium high heat, melt butter. Sautee onion and celery until transparent. Combine all ingredients in large bowl and mix well. Transfer to large baking dish. Cover and seal well with heavy duty aluminum foil. Bake in 350 degree oven for 30 minutes or until bubbly and heated through. Crockpot King Ranch Chicken 3 -4 cup cooked chicken, diced 1 package flour tortillas, torn into pieces 1 onion, chopped 2 cans cream of chicken soup 4 tablespoons quick cooking tapioca 4 cups Cheddar cheese, grated 1 can Rotel tomatoes original or spicy In a large bowl, mix chicken, soup and tapioca. Line bottom of crockpot with about 2- 3 of the torn tortillas. Top with 1/3 of the chicken mixture, 1/3 of onion and cheese -- repeat layers two more times. Top with Rotel tomatoes. Cover and cook on low for 6 - 8 hours or on high for 3 hours. Slow Cooker Chicken and Dumplings 4 chicken breasts, boneless skinless 2 tablespoons butter, diced 2 cans cream of chicken soup 1 onion, diced 2 rolls biscuits (10 ounce rolls), torn into small pieces Place chicken, butter, soup and onion in slow cooker, fill with enough water to cover. Cover, cook on high for 4 - 5 hours. Remove chicken, allow to cool until able to handle. Shred into bite size pieces and return to slow cooker. Add torn biscuits to mixture. Cover and allow to cook until dough is done, about 30 minutes.

Chicken a’la King 1 bag egg noodles, cooked 2 cans cream of chicken soup 2 cans sliced mushrooms 1 12 oz can evaporated milk ½ cup of chicken broth 3 chicken breasts, cooked and chopped 1 large onion, chopped 1 bell pepper, chopped 1 red bell pepper, chopped Cayenne pepper, white pepper, garlic salt, pepper 1) Spray large skillet with cooking spray. 2) Sauté onion and peppers until almost soft. 3) Add everything but egg noodles and heat to a boil. 4) Simmer mixture for 30 minutes 5) Serve over egg noodles Rotel Chicken Bake 4 chicken breasts, cooked and chopped ¼ cup butter 1 garlic clove, minced 1 bell pepper, chopped 1 red bell pepper, chopped 1 onion, chopped 1 can cream of mushroom soup 1 can cream of chicken soup 1 can Rotel 12 corn tortillas, torn into pieces 2 cups of cheese Pepper, cayenne pepper, garlic salt 1) Add butter to sauce pan and cook onion and peppers. Add seasoning to vegetables. 2) Add soups, Rotel and chicken. 3) Spray a 13x9x2 baking pan with cooking spray. 4) Layer the tortillas on the bottom, then the mixture, then the cheese. Makes two layers. 5) Top with cheese and bake @ 325 for 30 minutes. Chicken Tortilla Soup 6 cups of water 3 chicken breasts w/bones 1 onion, chopped 2 garlic cloves, chopped 1 bay leaf 1 jalapeno, minced ½ cup cilantro, chopped 2 cans tomatoes w/chiles Canola oil 4 corn tortillas, cut into strips 1 avocado, sliced 1 bag cheese, shredded Cumin, garlic salt, white & black pepper 1) Heat water in large stock pot until boiling. 2) Add chicken, bay leaf, onion, garlic, jalapeno and seasonings. 3) Boil until chicken is no longer pink inside. 4) Strain ingredients from stock 5) Remove bones from chicken then shred the meat 6) Combine chicken, stock, strained ingredients, tomatoes and cilantro. 7) Simmer for 20 minutes 8) In frying pan, cook tortilla chips in oil until golden. 9) Serve soup in bowls. Top with tortilla chips, cheese, cilantro, and garnish with fresh sliced avocado. Chicken Fettucine Supreme ¾ cup butter 1 ½ lbs chicken, cubed 1 package fresh mushrooms, sliced 1 red bell pepper, julienned 2 garlic cloves, minced 1 cup half & half ½ cup parmesan cheese, grated ¼ cp fresh parsley, chopped 8 oz fettucine, cooked Salt, pepper 1) Melt butter in large pan. Add chicken and cook until done. 2) Remove chicken – save drippings in pan 3) Add mushrooms, red bell pepper, garlic, salt and pepper and cook until tender. 4) Remove vegetables – save drippings in pan 5) Add half & half to pan and bring to a boil. Simmer 2-3 minutes. 6) Stir in cheese, parsley, salt and pepper. 7) Combine chicken, vegetables, sauce and pasta. 8) Sprinkle some fresh parsley over top and serve. * You could also make chicken enchiladas which I don't have a recipe for because I just throw them together. But that would be delicious too!
- how about spaghetti chicken casserole? Just cook off a box of pasta..any kind. Mix with the chicken and a jar of your favorite pasta sauce, top with mozzarella cheese and bake until hot and bubbly.
- Prep Time: 25 minutes Cook Time: 17 minutes Ingredients: 8 oz. medium egg noodles 1 cup water 1-1/2 cups chicken broth 16 oz. pkg. frozen broccoli, cauliflower and red peppers, thawed 1 onion, chopped 2 cups chopped cooked chicken 1/2 tsp. garlic powder 1/2 tsp. salt 1/4 tsp. pepper 1 cup shredded Swiss cheese Preparation: In 3 quart microwave safe casserole dish, mix noodles, water and chicken broth. Cover with lid and microwave on high for 6 minutes, stirring once during cooking. Add vegetables, onion, chicken and seasonings. Cover and microwave on high for 7-9 minutes, stirring once during cooking, until vegetables are hot and crisp tender and noodles are tender. Stir in half of cheese and mix well. Sprinkle casserole with remaining cheese. Cook, uncovered, on high for 2-3 minutes until cheese is melted.

- Or, you can shred it all and remove skins and pour a bottle of bbq sauce over it. Make BBQ chicken sandwiches or quesadillas!
- what about a chicken casserole with a potatoe chip topping . just take cut up chicken add a can of cream of chicken soup , a little milk ,mixed frozen veggies and mix all up and put into oven at 350 for 30 mins last 10 mins or so add crushed potatoe chips to top and brown . so delish .
- I have a great and easy casserole for you! Shredded Chicken* (your left overs) 1 cup cottage cheese 1 cup (small container) sour cream 1 cup Monterrey Jack Cheese 1 cup rice 1 cup cream cheese 1 small can of diced green chili's 1 small bag of Frito's corn chips Ok..I know it's not low Cal but it is so good! Mix all ingredients except chips all together in a casserole dish. Take chips and crush on top of ingredients to form a "crust". Bake at 375 for 30 minutes. We make this on Christmas Eve! Keep left over chips for crunchiness the next day!
