Recipe for chicken noodle casserole with Ritz crackers?

I've seen this made so many different ways, so I would like to hear some of your ideas?

Chicken Noodle Casserole 1 large onion, diced 1/4 cup butter 3 (10 ounce) cans chicken chunks (or leftover chicken) 1 pint sour cream 2 (10.75 ounce) cans condensed cream of chicken and mushroom soup 3 cups shredded Cheddar cheese 1 (8 ounce) package uncooked egg noodles 4 ounces buttery round crackers, crushed Preheat oven to 350 degrees F (175 degrees C). In medium skillet, fry onion in butter until softened. Pour into 9x13 baking dish. In large bowl, combine chicken chunks, sour cream and soup. Stir in 2 cups of shredded cheddar. Stir in uncooked egg noodles. Pour mixture over onions in baking dish. Top with crumbled crackers and remaining cheddar. Bake 30 minutes, or until top is golden and noodles are soft.

CHICKEN CASSEROLE 2 c. chicken or 1 whole chicken, chopped and cooked 1 c. cooked rice or noodles 1 tsp. lemon juice 2/3 c. chopped celery 1/2 c. mayonnaise 1/4 c. chopped onion 3 boiled eggs (optional) 1 can cream of chicken soup 1 stack Ritz crackers 1 block butter Mix all ingredients together except butter and crackers - melt butter - crumble crackers in butter and top the casserole with this - bake at 350 degrees about 30 minutes.
