Does anyone have a good and easy chicken enchilada casserole recipe?
I don't want to make individual enchiladas.

- I would just layer the ingredients you would normally put in an enchilada with a layer of tortillas on the bottom and top, covered in cheese. or just mix up all the same ingredients and instead serve warm tortillas on the side so people can make their own enchilada burritos Or just add some rice to the ingrediants and leave out the tortillas all together follow the link for a great community that has a ton of reipes for all sorts of things with user reviews so you know how good or bad a recipe might be

Drain and cool on paper towels. Salt tortillas and tear into quarters. Set aside. Saute chopped onion in remaining oil. - here is something i tried last week and it seemed to go over fairly well. i spread out our fave salsa on bottom of pan put one layer the larger tortilla shells (burrito ones) on the bottom of pan little more salsa layer of shredded cooked chicken bit of diced onion sliced jalapenos handful of shredded cheese ( your choice) another tortilla shell (repeat process as above) top with final tortilla shell and salsa and cheese with the final layer on top...i put in oven 350 for about 40 minutes for everything to heat all the way through cut up and serve..salt and pepper to taste... add dash more of your salsa and dollop of sour cream now you can also add beans to your layers if you like i don't just cuz i don't like em..i put them on the side for everyone else. lol..i also make a fried rice... you can have salsa and chips with guacamole on the side ... sour cream to dollop on top of the casserole...or to go with chips...
