What is a good recipe for a Chicken Broccoli rice and cheese casserole?
I'm looking for something quick and simple. I was thinking just some chicken, rice, cheddar cheese or should I use velveeta, little garlic and onions, my biggest thing is how much rice and should I cook and the chicken first?

- This recipe is a family favorite of ours CLASSY CHICKEN 3 chicken breasts, skinned and deboned 1/4 tsp. pepper 3 tbsps. oil 1- 10 oz package frozen asparagus or broccoli (fresh is even better) 1- 10 oz. can of cream of chicken soup 1/2 cup mayonnaise 1 tsp. curry powder 1 tsp. lemon juice 1 cup grated cheddar cheese Cut chicken into 2x4" pieces and sprinkle with pepper. Saute' slowly in oil over medium heat until white and opaque, about 6 min. Drain. Cook asparagus or broccoli until tender crisp, drain and arrange in bottom of casserole dish. Place chicken on top. Mix soup, mayo, curry, and lemon juice together and pour over chicken. Sprinkle cheese on top. Bake uncovered at 375 for 30 to 35 min. until bubbly. Serve over cooked rice. ENJOY PS. I most often cook the broccoli and serve it as a veggie on the side
- Cheesy Chicken & Rice Casserole Prep: 15 minutes Bake: 50 minutes Stand: 10 minutes Ingredients: 1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free) 1 1/3 cups water 3/4 cup uncooked regular long-grain white rice 1/2 tsp. onion powder 1/4 tsp. ground black pepper 2 cups fresh or frozen broccoli 4 skinless, boneless chicken breasts halves 1/2 cup shredded Cheddar cheese Directions: Heat the oven to 375°F. Stir the soup, water, rice, onion powder, black pepper and broccoli in a 2-quart shallow baking dish. Top with the chicken. Season the chicken as desired. Cover the baking dish. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Remove chicken to platter. Stir the rice before serving.
