- I always use a dry rub on BBQ chicken or beef. I use Tony Chachere's Creole Seasoning on everything and then add different herbs, depending on how I feel:) Oregano, rosemary, crushed garlic, Kosher salt & pepper are good ... or ... cumin, chili powder, paprika, garlic powder, Kosher salt & pepper are another option
- Marinade in Italian dressing, or french dressing or Country Bob Steak Sauce, then pepper and garlic sprinkled on as u grill all are really good and simple
- I have a marinade if that's all right. I don't measure, but you can just make it to your liking. Herbed Lemon chicken 2 chicken breasts 1/4 cup fresh lemon juice 2 tablespoons or so of soy sauce (for salt flavor) Minced garlic Ground chili flakes Fresh or dried rosemary leaves Oregano A bit of water to mellow out the salt and lemony flavor marinade chicken for a couple of hours, then grill. It's my sons fav.
- My favorite home-made rub: 2 t. salt; 1 t. paprika; 1/2 t. onion powder; 1/2 t. thyme; 1 t. black pepper; 1/4 to 1/2 t. cayenne pepper; 1/2 t. garlic powder. This is enough for a 4 lb chicken or 2-3 cornish hens. It is absolutely delicious on the grill OR on our rotisserie.
- Simple, healthy and quick way would be to sprinkle with Mrs. Dash.
- Mix up this rub and use this: **Sugar Pie's Rotisserie Rub** 2 tsp kosher salt 2 tsps paprika ½ tsp chili powder 1½ tsp garlic powder 2 tsps freshly ground black pepper or coarse ground black pepper 1 tsp onion powder 2 tsp. dry parsley 1 tsp. dry rosemary 1 tsp dried thyme 2 tsp. dried orange or lemon rind (Spice Islands makes this) Mix well and rub inside and out of a 4-5 pound chicken, or 2 (3 lb.) chickens. Tie legs together, and tuck wing tips under. Cook on rotisserie or in 325ºF oven approx. 1 ½ hours or until juices run clear.
