  1. Try frozen veggies instead. They have more texture and wont turn to mush in the casserole. Use Broccoli, peas, and carrots, in layers with shredded cheddar cheese and thinly sliced chicken added between layers. Start with chicken and end with chicken, then add one or two cans of cream of Celery soup with half the water or milk called for to make soup. Top with shredded mozzarella, and bake for 35 to 40 minutes at 350 degrees. If this combination doesn't appeal to you, pick one with vegetables that does appeal. Almost any three vegetables can be combined successfully with chicken, like potatoes, corn and French style green-beans. just layer like lasagna, with chicken and cheese between. The Cream of celery can be replaced with Cream of Chicken, Cream of mushroom, or cream of asparagus. It is a binding agent, sort of like Bechemel in Lasagna.

  3. Try Velveeta's Cheesy Pasta Casserole. It's super easy and very yummy. Here's a link: http://www.kraftfoods.com/kf/recipes/velveeta-cheesy-pasta-casserole-112182.aspx
