Need a tasty recipe for indoor grilled chicken breast?

I'm on Weight Watchers, and I need a good recipe(s) for boneless chicken breast, low fat, possibly with marinade to vary flavor. How would I get that grilled flavor?

  1. Use low fat italian dressing and soak the breasts for an hour or two. Cooking them indoors? Grilled flavor? Sorry can't help you there. You can also cut some fresh tomatoes squash and other veggies, put some on top of the chicken and wrap the whole thing in foil and then bake it.
  2. I am not much for grilling but I sure like to bake chicken. I put the chicken in a dish and cover with salsa (any kind, the peach mango is really tasty), then cover and bake 1-2 hrs on 350 degrees. Usually around 1 1/2 hr is okay. It can be baked in italian dressing or sweet n sour sauce-anything and it is so easy!
  3. Have you tried liquid smoke??? When I want bbq but don't have the charcoal, I slice up my boneless breast, slice up onion pretty thin, and a green bell pepper thin too, I put a little water in the pan and cook on a pretty high heat, and get the onion and bell pepper to blacken, making sure I do not let the chx burn. I like teriyaki so I pour some on, or simply molasses. You could substitute pineapple made with real pineapple juice or just the juice, same with mandarin oranges. To me the added burnt onion and pepper satisfy my bbq cravings.
  4. I'm on weight watchers too and honestly, I love it more than anything. To me grilled boneless chicken breast feels like diet food. So instead I sautee pre boiled chicken with 2tsp of oil and then add a lot of zero point veggies. then low fat mayo (worth of 1 point) and voila......very filling and healthy.

This is the chicken recipe I use all the time, I make "grilled" chicken on the stove every sunday so I have chicken for the week this is the seasoning I use http://allrecipes.com/Recipe/Blackened-Chicken/Detail.aspx ITake the chicken out of the fridge 20-30 min before cooking (this brings the chicken closer to room temp, chicken will cook faster). Heat the pan on high for maybe 5 minutes (don't put anything in the pan until you are ready to use it). I then use spray butter directly on the chicken (to avoid extra smoke) and put it in the pan spray side down. Let it cook on medium high heat for 5-7 minutes (you will see the sides of the breast turn white). Spray the uncooked side with spray butter and flip it over. Cook another 5-7 minutes. Take it out of the pan and let it sit for atleast 10 minutes. in short... 3 tips for tender chicken, 1 - take out of the fridge for a few before you cook it. 2 - heat pan to help cook chicken faster, allowing it to sear and seal in juices. 3- let chicken sit 10 minutes after it is out of the pan for the juices to flow throughout the chicken. If you cut it too early only the first bite will be juicy the rest will be dry.. good luck :)
  6. Marinade them over night in low fat italion dressing...this is bess when its small pieves of chicken because it gets more flavor.
