Chicken Casserole with Rice!!?

I want to make chicken casserole. Just chicken, sauce, and like rice. maybe some veggies. but you get what I'm saying. Easy is best. But you can give whatever you guys do! Thanks!

  1. I buy the instant boil in the bag rice. i precook some chicken breast,and buy the steam fresh frozen peas and brocolli. I cook the rice peas,brocolli and chicken(cut the chicken into dices). I mix all of it together with shredded cheddar cheese and bake.

Stir the soup, water, rice, onion powder, black pepper and vegetables in a 2-quart shallow baking dish. Top with the chicken. Season the chicken as desired. Cover the baking dish. Bake for 50 minutes or until the chicken is cooked through and the rice is tender. Top with the cheese. Let the casserole stand for 10 minutes. Stir the rice before serving.
  3. To make it easier, use boneless skinless chicken breast. Here's what you do. Heat 2 tablespoons of oil over medium heat and preheat the oven to 375 degrees. Dice one onion and finely chop two cloves of garlic. If you like, finely chop one stalk of celery and one carrot. Cut the chicken into bite sized pieces. Add the chicken and veggies to the pan and cook until the chicken in just browned and the veggies start to soften. Season with salt, pepper, and fresh or dried thyme. About six minutes. Remove the pan from the heat and let cool. In an ungreased casserole dish, mix the chicken mixture with one can of cream of mushroom soup and one can of water. Add rice to the mixture. Bake in the oven for about 30 minutes, or until rice is done. If you like a topping, take one sleeve of Ritz crackers and crush them up. Mix them with a little melted butter, just to moisten them. After about 20 minutes of cooking time, sprinkle the crackers on top of the casserole with a little shredded cheddar cheese.

One-Dish Chicken, Vegetable and Rice Bake -- INGREDIENTS 1 Can Condensed Cream of Mushroom Soup or Cream of Mushroom Soup 1 cup water 1 (6 ounce) package seasoned long-grain and wild rice mix 1 (16 ounce) package frozen vegetable combination (broccoli, carrots, water chestnuts) 1 cup shredded Cheddar cheese 6 skinless, boneless chicken breast halves Paprika DIRECTIONS Mix soup, water, rice, seasoning mix, vegetables and half the cheese in 3-quart shallow baking dish. Top with chicken. Sprinkle with paprika. Cover. Bake at 375 degrees F for 1 hour or until done.
