Im cooking an easy first time casserole..tell me what you think..?
Ok so I want to make a casserole with rice, cheese, chicken, and brocolli..heres my plan. Bascially Im going to buy a rotiserie and pick the chicken off. Im going to pre cook the rice and brocolli. Then in a casserole dish Im going to combine the cooked chicken, rice, and brocolli with a 10 3/4 oz can of Cream of chicken soup and a half a cup of cheddar cheese. I will bake at 350 for 20-30 minutes...covered or not covered? what do you think about this...

- Put the cheese on the top, and bake it uncovered. It sounds good. Gotta love rotisserie chicken, they are so handy for so many recipes!
- Go to kraft foods for this casserole recipe instead of guessing.
- Don't know about adding the cheese to the casserole? Maybe add some grated cheese at the end by sprinkling on top and serving it just as it is still melting. Don't take this the wrong way... but is this an american recipe as they seem to use A lot of cheese this way? Also would suggest adding some cooked, sliced onions and salt and pepper and maybe garlic if you like it and or some dried mixed herbs - just to give a bit of extra flavour. Anyway - good luck - you just have to give it a go and after can decide if you want to change anything for the next one! The time seems fine, because the chicken is cooked, but you could always reduce the temp and time for a slower cook, which should bring out the flavours more.
- Sounds great to me! I would probably bake it uncovered or at least the last half of the time uncovered.
- if you put the cheese on top cover for the first 15 min. It may burn otherwise.
- Since everything is already pre-cooked, 30 min uncovered should be enough - just so the cheese & sauce are bubbling. And make sure you undercook the broccoli, so it doesn't overcook in the oven and turn a nasty olive green color (and taste too strong). If it's frozen broccoli, just thaw it out and don't cook it first at all.....
- Cover it until the last 5 min or so, to make sure it's hot thru and thru and to get it brown on top. I'd add about half a cup of sour cream or mayo to it, too.
- all sounds great and easy I would add maybe 1/2 cup of white wine or apple juice to it so it doesn't dry out. I would also bake it for 20 mins with the lid on to make sure it gets all steamy and hot then take the ld off and add more cheese across the top and bake another 10 minutes.
